When removing the Kelly kettle from the heat hold both sides of the handle at a 45 degree angle to the kettle and lift. This keeps your hands from being above the chimney and getting burned. Depending on how much you have stoked the fire the flame may be coming out the top several inches. Once removed from the fire an set down you can hold the center of the handle without risk of getting burned.
