Creamy Spinach and Artichoke Chicken Stew

Soup and Stew season is upon us and while I always have my go-to soups on hand, I've been craving a little something different.
I've put together this creamy spinach and artichoke chicken stew, because 1-who doesn't love spinach and artichoke dip and 2- one pot meals are a winner! This dish is perfect for a weeknight meal because it comes together in just about an hour but it is delicious and elegant enough for company.
