Icing ingredients:
80g melted dark chocolate
1/4 cup vegan butter
2 cups icing sugar
1/4 cup plant milk
1 tsp vanilla extract
Lentil and walnut mince:
1 brown onion, diced
1 tbsp oil
1 cup walnuts, ground
400g brown lentils, drained and rinsed
2 tbsp soy sauce
2 tbsp tomato paste
30g taco seasoning
salt and pepper, to taste
1/4 cup water

Also, totally agreed 9 times out of 10 the only vegan cake available will be a ‘raw vegan’ which isn’t really a cake imo haha so annoying! That’s the only time I feel like I have FOMO

Nearly every cafe menu seems to have a vegan option with currants or some type of dried fruit or pomegranate seeds in it, which I can't stand. Maybe they all got the same memo. So 90% of these salads I wouldn't order as the combo doesn't work for me.
