@wishwellfarms We are in South Louisiana & got 10" of snow Tuesday, had an official blizzard (35mph winds) & it was 5° Wednesday morning. We've never seen that here, & we're 71 & 73!! We set several records!! It really was beautiful - so much fun!! We're in the 40's today, so not as beautiful anymore with the melting snow!!

Am I the only one that thinks this really cool but also questions the payback on such an investment and the complexity of the systems?
I understand what you’re saying, but this is the way most all hydroponic systems are, they can seem very complex and expensive, however, this is a very small expense and very uncomplicated compared to even regular farming. Most people have no clue how much is involved in running a farm operation. The only complex part of this operation to me after being there was working with all the chefs. You might be right on the payback of the investment, I can't really speak to that, but he does seem to be doing well and making a living off of it. Thanks for the comment!

Hi Jason. Well that was an eye opener for sure. I thought, how do the walls get light? Wow, pure wow. I have Borage seed so I think I will start some off. Never ate it before. I think as he caters to a certain amount of customers, scaling it up would prove difficult, unless he has a first class distribution service. A very interesting topic 👍👍 Elaine 🌱🌱🌱
Yes, you may be right, but fortuately for him, like he menitioned, there is an incredible culinary scene in Charleston, which definitely helps him. He did mention off camera that there are still numerous high end restaurants and country clubs that he does not service yet so it sounds like there is certainly the potential for growth.

what's your opinion about rucola,Jason ? I am bewildered how on earth people can deem it tasty or even edible.It's odour is atrocious, so is the taste. By the way,has Joel cleaned his mess in the industrial kitchen ?
never heard of rucola so can't speak on it. I haven't checked with Joel lately on his mess in the kitchen but I plan to incorporate that vid into his sugar shack video during Feb while boiling sap....I'm guessing he still has his freeze dried candy mess in there...
Those LEDs were cheaper than the full spectrum. I was thinking that without using the Sun they would have high overhead in utilities, but that is incredibly low density on LED diodes. Are those panels even 100w each? I'd guess 60-100w. I'd still rather have a polycarbonate roof for free photons, but maybe there are reasons, cooling costs perhaps. I have many years experience setting up grows, mine were illegal, but I would love working on setting farms like this up. Very cool! Look into tissue analysis at Science in Hydroponics. You can calculate feed ratios based on tissue analysis of the leaves, only feed what the plants are using

Apparently top chefs want it to garnish their plates with it. I’m sure that setup can not grow potatoes.
