Lance Accord is the DP, I'm sure he had more to do with the cinematography than Coppola did. Go watch Buffalo 66, has a similar desaturated, grayish look. Also, read "New Cinematographers", there's a whole section with Lance Accord describing the choices he made for the film. Amazing breakdown by the way. Makes me want to watch the film again.
