Mounding back over the young potato sprouts is how my granny did it in her garden in Idaho. Also, I'm sure you've heard this plenty, but it is good practice to cut your seed potatoes 3-5 days ahead of time to let them form a skin over the cut surfaces. I was visiting with my cousin one day this Winter and the subject of planting potatoes came up. With a straight face he said, "When planting potatoes 🥔 folks should cover them with paper" "Why's that I asked?" He said, "It's so ya don't get dirt in their eyes!" Seriously you have some good looking soil and your soil moisture is looking good! We are dry here in Mid-Minnesota. We have enough to get things started and I pray each day that rains will be sufficient this growing season! Patience and in God's time it will!!! God bless you and your family.

Great video this evening, from start to finish. Glad you are able to be playing in the dirt. You talked about maybe your two tractors might be different width, have somewhat the same problem. One of my garden tractors has 7 1/2" wide tires and the other has 9 1/2" wide tires. If I have my head in the sand and lay the beds out with the one with the narrower tires, I pay for it all summer long. Two inches over a dozen rows add up. When I cut potatoes for planting, the cut part is covered with wood ash and let dry for a couple days. Am sure how ever anyone does it works in the end for them. Had to laugh at the end. Had my favorite supper/breakfast to. Mine was hot cakes, egg and sausage. We are blessed to have wives that cook our meals for us, and our favorite dishes. Blessings your way. Joey that was no myth that farmer told you about covering the potatoes as they start popping up. Years ago, Grandpa would plant his and when they started popping through the ground, he would put the disks on his Cub and run through them and cover them again. Daddy did the same thing and used to say it was better than cultivating them. I think I have done the same thing in years past. I don't know if we made more potatoes but we always had a good crop.
Just put you a opening foot in the center of the row drop your potatoes and cover with your hillers. Keep hilling them like the old timer says. Been growing them for along time
a home grown Russet is nothing like what you buy in stores. I'm guessing you have grown them before, but if you havent you can easily take a bag of grocery store russet potatoes and send it to seed by keeping it in a well lit area. As with all store bought tubers, you would want to wash it before hand in case anti-sprouting coatings were used.

So all my corn and pumpkins will be late this year. So I will have 5 foot tall serial grain rye growing on all my fields until may 4th.

You can take a tire fill with dirt , plant the potatoes. Then when the plant is high enough to be a little over the next tire fill with dirt . And keep doing this as high as you like . When it’s time to harvest remove one tire at a time and each one will be filled with taters .

We always cut the potatoes and let them dry a day spread out before planting, it lets them "heal over" to keep out fungus/insects/rot. More important in cold clay areas than sandy.
It will work! I use rolling cultivators on mine. I do it even when the limbs/leaves are spread out. As they grow more, I tend to not completely cover them.

I hope you are not planting those two side by side...If so, take it from the lips of my grandmother. Don't. The squash will be fine, but the cucumbers will be so bitter you won't be able to eat em. One continuously produces while you harvest the other produces and once harvested that’s it. I know tomatoes are this way. First time hearing about taters. From what I was told back in the day my uncle said they used to harvest potatoes leave the plant in the ground and continue harvesting through fall. Only time I ever heard of a reproducing potato plant. One that doesn’t die back during or after first harvest.

I’ve done that before with my potatoes. Sometimes they push through and sometimes they don’t. There’s a fine line on how much dirt to roll over them

Better to plant potatoes on flat ground then you can pull dirt up on the plants I do that twice and ferdilize before pulling up dirt
