In my opinion memorizing and learning what the recipe is about make it much easier. You can quickly check at glance if you are not sure of something. Before I am starting to cook I read recipe 3-4 times to understand what I am doing and plan in head what is needed
It's also why I appreciate Ethan's videos that focus on method and frameworks. I don't have to worry about memorizing or following a specific recipe if I know the guidelines on how to put a bunch of different things together.
I've always appreciated that even in your "can I make it faster than" videos, you're relaxed, getting stuff out of the fridge, taking it easy... xo many vids show them panic cooking and doing a half-assed job...
Yeah, I absolutely love Kenji's format. It's much more impactful to making me a better cook Edit: I also appreciate Ethan's style here. In general, real-time kitchen flow is way better for teaching cooking skills imo
I think a mix between the two is good. The raw end to end of Kenji’s vids really helped me learn how to cook actually. The little things really helped me identify times where I’m messing too much or too little with certain parts of a dish. Also takes anxiety out of some of the process because there are some methods that are more easily demonstrated through actions than words or a cut of the end product. Even in this video it was helpful to show the last few minutes of cooking the steaks because it shows how often others are flipping versus leaving.
Midway through watching- I love this format for so many reasons. Very relaxing to watch, and this will be super helpful to follow along. Would definitely love to see more like this- maybe a brunch episode?
I actually like the way you showed all the little "behind the scenes" details like the slightly tedious task of chopping the parsley and how it gets stuck on your fingers. Even though I'm a relatively experienced home cook, I sometimes wonder how other chefs deal with little issues not shown in the edited versions we are served on TH-cam channels. Keeping it real is really appreciated.
I REALLY do enjoy the longer form content. Makes it a bit easier to conceptualize how long I could be taking to make everything come together, or in my case being able to adjust the time I would need to make it. Also, its an underrated skill being able to put together a dinner and have everything come out at the same time! Great Video!
I really appreciated that you started with an empty kitchen here. So many cooking/recipe videos start with all the ingredients prepped, and while I understand from a filming perspective, it can make it really hard to see just how long it will actually take to make it all and even make it seem much more manageable when the prep work truly takes a huge chunk of time. Love the new format!
This format feels great. It feels so relatable to watch you cook with all the good moments and the bad, and shows how to use your time to clean, organize, and other non-cooking tasks. I'd love to see this video as a livestream, with someone there with you asking you questions from the chat (why did you just rotate the steaks, etc) while you cook. I enjoyed this.
The first half of the video was calmly-paced. But the second half where the urgency picked up was very relatable for me - trying to clean, do more prep, put dishes away, wondering what step is next, etc. are all things I do despite all the mis en place and initial prep. Not too many cooks show the little scatterbrain moments.
Really great format for a video. Time is my biggest hurdle in day to day cooking. Learning how to manage time in the kitchen is a skill I dont see talked about often.

Just wanted to point out about the importance of washing and thoroughly drying your veggies before cooking and especially in raw applications which could have all been done before cutting them :) other than that, this is probably one of the best formats you have done as well as the blind taste tests for specific ingredients
I had a bad experience last year. I steamed green beans to have with pie and mash, I mustn’t have washed the beans correctly and half way thru my meal I spotted something moving on my plate…..I ran to the kitchen to investigate under a bright light, and there was a slug. I vomited and put the rest of my diner in the bin. It was a horrible experience I’ll never forget
I am loving this format! It was very realistic setting a goal in mind but still going through all the steps like one would normally do for the home cooking setting. One of my gripes with timed challenge videos is usually when someone proclaims "it's easy and possible in XX minutes" meanwhile cutting out all the cleaning tasks and proceeding to rush through and cook in a very stressful way. I loved seeing you go through your kitchen doing different tasks in parallel while still trying to maintain a clean kitchen. This is definitely something I want to see more of, great job!

I like this format. It feels more honest than most of the 15-20 min meals that are show on YT. This is the actual time it takes for a meal like that. I know some people just want to see the finished product, but me and probably many others that are trying to figure out life when there are limited time slots involved, really prefer this way.
I like the format with the multi-cams and showing the normal work/steps that go into everyday cooking. You work much like I do, cleaning up as you go. Since you asked, here are a few thoughts: 1) If you moved the prep cam to a place directly across from the island, perhaps on the outside of the pantry, you could eliminate the prep table that blocks your access from the sink side of the island giving you better flow in your kitchen 2) Looks like you have a garbage disposal in your sink. You might include that, for those who don't, using a strainer in the sink will help eliminate costly plumbing repairs by stopping the food stuff you grind in your disposal 3) You really should wipe/clean the probe of the instant read thermometer before folding that dirty tip into the holding clip unless you clean the holding clip every time you use the thing - something not really recommended by Thermoworks. Looking forward to how you expand this format and future meals.
I think it’s great to show the chaos of the home kitchen during meals. Many of us have kids and may need to deviate our direction once or twice to make a meal that works for the whole family. I have a small kitchen and meal prep usually adds over a thousand steps to my day. I love this approach, it really helps people understand even for the more experienced cooks, things don’t always go as planned.
29:57 I've found you can grip the steaks in your tongs, pull the tag at the end to tighten them, then set them on edge to render/char the fat and having the tongs as a resting/balance point means they'll never fall over. Not so helpful with 2 steaks and 1 set of tongs but something to bear in mind.
Loved the video! One thing I'd add to this style of video is fairly detailed timestamps so that if a month from now I come back to this video to remind myself of a specific technique you used or whatever then it's easy for me to navigate to that point.
Would have been so easy to edit this and make yourself look like you did an absolute flawless job. I for one really appreciate the humbleness and honesty showing what most all of us go through cooking at home. And the meal looked amazing by the way! Well done.
I can’t tell you enough how I’ve been waiting on a video like this. I always have these small seemingly insignificant questions that keep bothering me and never get answered. Like is it okay to have multiple steaks in a pan at the same time, is it okay to cook lower and slower than just ripping hot searing, when do you start one thing and finish another. This format really helps answer those questions. Love it!

For the steak, I highly recommend checking out the cold sear technique put out by America's Test Kitchen. Super quick, and little to no smoke produced; it's been an absolute game changer especially for apartment life.

i like the idea of having these types of videos that i can cook along to. i use a lot of recipes i find here on youtube, but if there's no written recipe, just the video, its super difficult to knkw what to shop for and i have to pause and rewind and fast forward videos not only while grocery shopping, but during the cooking process which makes it hard to make a meal and clean efficiently without stressing out about one thing or another. thank you for this content it is extremely invaluable ❤

I think this was one of the best videos for me getting insight into the steak cooking. Standard videos just show a few shots and, boom, it is done and perfect. By see how long it took, how many times you flipped them, how times you poked them with the thermometer, all of that is *what* gives one a feel for what to expect.
I loved the format. There are lots of questions after watching even other home cook videos. This was as close to a classroom setting as we’re going to get over TH-cam, and I appreciated it.
I found your channel only a couple weeks ago and it had seriously improved my home cooking skills, I used to only cook when I knew I didn't have anything for several hours. i really love this, especially when i was just getting started with cooking i always hated when youtube chefs would cut away near the end part of cutting a vegetable, because i always used to struggle with that, it might not make for the perfect camera shot but it has to be done and its nice to see how its done
This is amazing! I started cooking when Tasty was a big thing and it was hard to follow because it was all so fast. Videos like this one would’ve helped so much back then, I’m sure it will help newcomers and beginners
More of this, please! I'd love to see a variety, too. Everything from 10 minute, easy weeknight meals, perhaps that you've come up with on the spot from ingredients you have on hand, to hour, hour and a half, much more involved meals. I think it'd be incredibly helpful to demonstrate how the things you're thinking about change when going through that range of different cooking experiences.

Fantastic video! Another topic i would love to watch is seeing how to cook a meal for a crowd with 4 or 5 people in the kitchen. I go on vacation with a group of people with varying cooking skills. It is always interesting and a fun time and would love to see how you would tackle this environment
Love the planning of what to do when. With Thanksgiving coming up now, I'd love to see a set of what to do the night before, and what to do on the day of --for holiday cooking or cooking several unrelated items.

Great concept for a video. This is why Kenji Lopez-Alt is the GOAT of TH-cam food videos because he does exactly as you’ve tried to portray here. No cuts, you can see him working from the fridge to the sink. Best is sometimes he messes stuff up but still serves it

Love the format! As an aspiring home cook I sometimes feel like I'm doing something wrong when it's _so hard_ and messy for me, meanwhile it looks so smooth, easy, and polished on the tube.
I absolutely love this style of video! Everyone always says "oh, you can cook this in 20 minutes...." but I really doubt it. Show me what you're doing so I can see how fast you're going, how you're multi-tasking. This is extraordinarily helpful for a home cook!
This is brilliant. And just on your talking points at the start, I think that's why when I first found Kenji a few years ago, it was so refreshing to see a perspective of home cooking that felt true to what it's like to be a home cook. Your videos with minimal cuts are always brilliant, and they're on frequent rotation for me when I need a little inspiration.

Why no food scrapers for those inevitable home-cooking mishaps like having orzo burn and stick to the pot? 2. Would you recommend letting the meat rest on the wood slab like you did in this video, or would it be better to have a wire rack on top of the slab to allow air-flow around the entire steak, theoretically preventing it from steaming? Interested to hear your thoughts on both! Keep the great content coming!
This is a really cool concept. Like an on demand cooking class, that people who watch can go with you in real time and be able to hear as well as watch without pausing since we’d be chopping along with you. Awesome!
Definitely like this format. In particular it was nice seeing how you found ways to clean and put away as you go. Others have mentioned that it’s different when you’re following a recipe since you use some of that down time to read the next steps, but I definitely think this was well worth the watch.
For me, this video solidifies you as one the absolute best food tubers here on this platform. The home cook gets completely ignored by most others which is understandable as they make a career out of it and can lose the sense of urgency when it comes to finding recipes and making food for themselves or their families. Seriously, bravo! Incredible content.
This is a great idea Ethan, and I hope it won’t stop here. You really gave me a lot of ideas, mostly on enhancing my organizational skills when it comes to pots/pans/prep bowls etc. while cooking this is always a hassle for me. I’d also like to mention, the germ freak in me jumped up when you took the strainer from the sink straight to your salad bowl, water from the sink might’ve or probably did drip into your salad bowl, it’s always a possibility to have cross-contamination while rushing to cook under time constraints, also, as a home cook. I love this raw approach in what I hope is a new series for you. More power to ya Ethan! Big fan!

Great video format! I'd love to see more of this. If possible, I'd like to see the same performed in a small apartment kitchen. It will also serve as a good reference to decide what kind of dishes would be suitable to cook in a kitchen with limited amount of space and tools!
I love this format and I could really see it being great for the channel too! Have the long form for those who want it, you could then cut this down into a traditional recipe video with voice over, then further into a short to cover the bases on viewer interest.

It always tilts the hell out of me when I see a video that says “Cook such and such meal in 15 minutes!” And oh by the way they have the spices and oils already measured out, the protein is already prepped, vegetables are already chopped up, etc. I hope to see another one of these soon! Loved the video! I was woried it would be some sort of "speed run" video, where you stress around the kitchen to make time, which is the opposite of what this turned out to be! Super awesome seeing you cook like I'd actually want to cook, that is, chlling around and not worrying too much about the time.

I use the same sponge for cleaning. If you'll give it a good ounce to ounce and a half of soap before you start (to soak in) it will last all the way through cleaning the dishes and you won't have to continuously add soap to each dish. Great video.

I can’t tell you enough how I’ve been waiting on a video like this. I always have these small seemingly insignificant questions that keep bothering me and never get answered. Like is it okay to have multiple steaks in a pan at the same time, is it okay to cook lower and slower than just ripping hot searing, when do you start one thing and finish another. This format really helps answer those questions. Love it!

For the steak, I highly recommend checking out the cold sear technique put out by America's Test Kitchen. Super quick, and little to no smoke produced; it's been an absolute game changer especially for apartment life.

I’m a home cook in NYC, small kitchen, envious of your kitchen. After 50 years of home cooking I’m still not confident with steaks especially the pricey ones. The steaks you’re cooking look exactly like what are sitting in my fridge. I appreciate the trick cutting grape tomatoes with two deli container lids kind of genius. i like the idea of having these types of videos that i can cook along to. i use a lot of recipes i find here on youtube, but if there's no written recipe, just the video, its super difficult to knkw what to shop for and i have to pause and rewind and fast forward videos not only while grocery shopping, but during the cooking process which makes it hard to make a meal and clean efficiently without stressing out about one thing or another. thank you for this content it is extremely invaluable ❤
I love this format so much! It gives an actual idea of how long each thing takes and how to manage time to cook the protein and sides at the same time. Plus this might actually give me the willpower to do my dishes while I'm cooking which is always a struggle.
This is great. Timing. A lot of cooking videos show the process but not the time and incidental things to put a whole meal together. I like this format, continue.

I think this was one of the best videos for me getting insight into the steak cooking. Standard videos just show a few shots and, boom, it is done and perfect. By see how long it took, how many times you flipped them, how times you poked them with the thermometer, all of that is *what* gives one a feel for what to expect.
I loved the format. There are lots of questions after watching even other home cook videos. This was as close to a classroom setting as we’re going to get over TH-cam, and I appreciated it.
Love these long-form, real-time videos, with all the thoughts, considerations, and mishaps that happen while really cooking.
I found your channel only a couple weeks ago and it had seriously improved my home cooking skills, I used to only cook when I knew I didn't have anything for several hours. I would LOVE to see this type of video for complex meals like Thanksgiving dinner, Easter, Christmas, etc especially where volume is a variable.

i really love this, especially when i was just getting started with cooking i always hated when youtube chefs would cut away near the end part of cutting a vegetable, because i always used to struggle with that, it might not make for the perfect camera shot but it has to be done and its nice to see how its done
This is amazing! I started cooking when Tasty was a big thing and it was hard to follow because it was all so fast. Videos like this one would’ve helped so much back then, I’m sure it will help newcomers and beginners

Everything from 10 minute, easy weeknight meals, perhaps that you've come up with on the spot from ingredients you have on hand, to hour, hour and a half, much more involved meals.
I think it'd be incredibly helpful to demonstrate how the things you're thinking about change when going through that range of different cooking experiences.

I would love to see this format for all kinds of recipes, from easy to medium to hard. ideally uncut. it answers soooooooooooooo many questions that often go unanswered on cooking-youtube!
This is perfect. My recipes r not ingredients but rather exactly steps that I've figured out over time to maximize efficiency, which often means I'm wasting a lot of time when I start making a recipe. This format should help out with newer recipes. Keep it up Ethan!
Fantastic video! Another topic i would love to watch is seeing how to cook a meal for a crowd with 4 or 5 people in the kitchen. I go on vacation with a group of people with varying cooking skills. It is always interesting and a fun time and would love to see how you would tackle this environment
Love the planning of what to do when. With Thanksgiving coming up now, I'd love to see a set of what to do the night before, and what to do on the day of --for holiday cooking or cooking several unrelated items.
This is an awesome format. I'd honestly watch whatever kind of meals you wanted to cook this way. Weeknight meals are a nice start, but I think the big elaborate meals would also behoove this format. Thanks for the awesome content!

Great concept for a video. This is why Kenji Lopez-Alt is the GOAT of TH-cam food videos because he does exactly as you’ve tried to portray here. No cuts, you can see him working from the fridge to the sink. Best is sometimes he messes stuff up but still serves it

Love the format! As an aspiring home cook I sometimes feel like I'm doing something wrong when it's _so hard_ and messy for me, meanwhile it looks so smooth, easy, and polished on the tube.
I absolutely love this style of video! Everyone always says "oh, you can cook this in 20 minutes...." but I really doubt it. Show me what you're doing so I can see how fast you're going, how you're multi-tasking. This is extraordinarily helpful for a home cook!

This is brilliant. And just on your talking points at the start, I think that's why when I first found Kenji a few years ago, it was so refreshing to see a perspective of home cooking that felt true to what it's like to be a home cook. Your videos with minimal cuts are always brilliant, and they're on frequent rotation for me when I need a little inspiration.

I really dig this. I would watch tons of these. I feel like seeing examples of not just recipes, but menu construction, and execution of several small, relatively simple dishes is much more analogous to how a lot of people will be cooking at home. Thumbs up.

A lot of times I try to make things I see content creators make and the cuts make it seem like it will be quick but I don't factor in the prep, cleaning, and the process as a whole. Ethan, loving this format to get a true "inside look" at the whole process. Couple of questions/comments: 1. Why no food scrapers for those inevitable home-cooking mishaps like having orzo burn and stick to the pot? 2. Would you recommend letting the meat rest on the wood slab like you did in this video, or would it be better to have a wire rack on top of the slab to allow air-flow around the entire steak, theoretically preventing it from steaming?

This is a really cool concept. Like an on demand cooking class, that people who watch can go with you in real time and be able to hear as well as watch without pausing since we’d be chopping along with you. Awesome!
Definitely like this format. In particular it was nice seeing how you found ways to clean and put away as you go. Others have mentioned that it’s different when you’re following a recipe since you use some of that down time to read the next steps, but I definitely think this was well worth the watch.
For me, this video solidifies you as one the absolute best food tubers here on this platform. The home cook gets completely ignored by most others which is understandable as they make a career out of it and can lose the sense of urgency when it comes to finding recipes and making food for themselves or their families. Seriously, bravo! Incredible content.

You really gave me a lot of ideas, mostly on enhancing my organizational skills when it comes to pots/pans/prep bowls etc. while cooking this is always a hassle for me.
I’d also like to mention, the germ freak in me jumped up when you took the strainer from the sink straight to your salad bowl, water from the sink might’ve or probably did drip into your salad bowl, it’s always a possibility to have cross-contamination while rushing to cook under time constraints, also, as a home cook.
I love this raw approach in what I hope is a new series for you.

If possible, I'd like to see the same performed in a small apartment kitchen. It will also serve as a good reference to decide what kind of dishes would be suitable to cook in a kitchen with limited amount of space and tools!
I love this format and I could really see it being great for the channel too! Have the long form for those who want it, you could then cut this down into a traditional recipe video with voice over, then further into a short to cover the bases on viewer interest.

I’m loving this style of video. It always tilts the hell out of me when I see a video that says “Cook such and such meal in 15 minutes!” And oh by the way they have the spices and oils already measured out, the protein is already prepped, vegetables are already chopped up, etc.

I was woried it would be some sort of "speed run" video, where you stress around the kitchen to make time, which is the opposite of what this turned out to be! Super awesome seeing you cook like I'd actually want to cook, that is, chlling around and not worrying too much about the time.

Ethan, great format - really enjoyed watching your thinking and adjusting as you went - as you pointed out in most videos we don't see the starts and stops when it comes to the prep and working through the ingredients - adjusting on the fly was encouraging to this amateur cook - great content - I can't think of a meal I wouldn't enjoy seeing in this format - kuddos on the kitchen itself so clean and streamline - laughed when you searched for the strainer - that hit home - I don't know if you have done a video on how your kitchen is organized but a pantry cam would complete this format for sure - thanks
I use the same sponge for cleaning. If you'll give it a good ounce to ounce and a half of soap before you start (to soak in) it will last all the way through cleaning the dishes and you won't have to continuously add soap to each dish. Great video.
I've been watching Ethan's videos more and more lately. I haven't been subscribed until today. He's just getting better and better at making his videos relevant for the home cook which I feel most channels (while great) don't really capture.
