Plo Koon has two great quotes from a graphic novel called "In service of the Republic" that show his wisdom and compassion. He, Kit Fisto, and a spec ops squad of clones have just found a village that has been destroyed by a storm caused by a Separatist weather control device. Plo and Kit, along with a native soldier who was guiding them, proceed to bury the bodies, and Plo says "Every battleground takes its toll in lives. But none so tragic as those of the innocent." Immediately after he says this, the captain in charge of the spec ops squad asks what difference burying the bodies makes. Plo and Kit then have a conversation about how the clones do not have the experience, and as such the patience, as they do. The captain cuts in, saying that the Separatists will do whatever it takes to win, and asks what the Republic will do. Plo Koon replies with one of the best lines in Star Wars history: "We are at a disadvantage, Captain, because we will not abandon our ideals to win. If we became the enemy in our hearts and minds, then our victory would be for nothing."

I’ve l ways loved Plo, he’s my favorite for a number of reasons but mainly for his compassion and understanding nature, he never shunned emotion like most dogmatic Jedi and was forgiving rather than the zealously of the order.
He understood the Clones, gave some faith in Ahsoka during the bomb-plot where she was accused and shunned by most of the order, he gave his advice to Anakin and was nearly as much a mentor to him as Obi-Wan.

Hero and highest commander of the republic in both the stark hyperspace war and the Yinchorri uprising. The only Jedi to be considered Anakins equal in pure skill with form V. The only known duellist to ever defeat yoda. One of the only beings who mastered force speed. Probably physically the 4th most imposing Jedi of his time (after Pong Krell, K'kruhk and Master Judd). The most experienced battlefield commander and warrior of the order. The pioneer of electric judgement and the reason Luke later learned this ability. A master of all Baran Do abilities including creating storms, electro-magnetic fields and creating ice/water/fog. Capable of collapsing small mountains with a motion of his hand and easily defeating Assaj Ventress (who sometimes fought both Anakin or Obi-Wan nearly equally) despite being hindered by a broken arm. Used force speed to destroy hundreds of droids and some tanks so quickly that a clone could only utter 3 words. Was probably the wisest and calmest jedi together with yoda and Terra Sinube.

He would probably have been the best option for Grand Master if the Order had gone on normally and if Yoda stepped down.
Windu was very powerful yes, but he always seemed too, aggressive for a Jedi. Both in how he fought and the personality he showed. It was not some grand, worrying aggression but a subtle one that would make me worry if he was to be the guide, so to speak, of the entire Order. Mundi was wise in his own right, but was also too cold as a Jedi, taking the whole "emotional detachment" a bit too far, to the point where his regard for life with certain things felt strange and the again, subtle arrogant underlying ego was worrying.
Shaak Ti, Aayla, and Lunimara seemed more like true light side Jedi like Plo Koon.
