I've read that if you put the clusters in the freezer for an hour or so, the berries will fall right off the stems with just a little shake. This is important because the stems are poisonous; you want to make sure there aren't any in your food.
Great video.Elderberry jam is fantastic. Also,in Florida,the elderberries here can only be found in swampy ground. The kind we have are not drought tolerant at all. I used to live in Vermont and it was the same way there,they need a lot of water.
elder Berry's have antibacterial and antifungal properties as well as antiviral. I use a save made from it for cuts and scapes. its good for skin conditions like rosacea and acne. don't eat the stems and seeds though. great stuff that elderberry.
If you want REALLY potent medicine then you need to harvest the LEAVES. The leaves are the most potent part of the plant. The drying process is even easier.

Do you wash them before you dry them? Do you attempt to get the white off of them? Or is the white fine? Thank you for your information.
The white is 'blue bloom' and natural part of fruit. Might need washing if collected along a dusty road.
