Nice rig you have there,we have the same.
A little point for you.
Put a small fan in front of your draft door , it will push some cool air into your fire box.
We have the last 2 years, huge improvement on your boil.

spot on, sugar content is rather low. boiled 70 to 80 gallons of sap and got a pint over 3/4 gallon. sugar sand gumming up the filters.

How much sap you leave in pan after you drain off , so not to burn up the pan, for your final last boil
