Pork butt is my favorite thing to smoke. Everyone has a different recipe but yours seems to be very simple and very appropriate. I am going to try it just like that on my next one.
Thanks so much for the support! I highly recommend doing the dry brine over night. I've cooked pork butt without it and its not as flavourful. Also, I tend to wrap the butt at an internal temp of 165°F if it's bigger than 3-4lbs, unless you have all day to leave it unwrapped. Good luck and I hope you enjoy your next cook! I always seem to question whether I should use all the drippings that form in the aluminum foil after wrapping the pork butt to mix with the pulled pork. What do you recommend?
@@trapper567 Absolutely use the drippings, it's full of flavour! I always do that. Keeps the meat more moist in my opinion too. You can't go wrong with it.

I'm curious if you had flare ups which caused you to use the pan.
