I only draw with pencil (just black and white stuff) and paint (only acrylic and watercolour) and even then I’m only alright at certain realisms like wildlife/nature and partial faces. To flip something of that size, place a flat greased baking sheet over the griddle and invert the griddle onto it. Then you can complete the cooking process by laying the baking sheet on top of the griddle. Otherwise, there are giant spatulas you could get, which are typically used for pizzas or large pancakes.
