Our nephew Mark is staying with us, until the end of the year, and I went back and put extra blankets and an extra pillow in the guest room for him. I also filled a glass vase with coffee beans and a votive candle. He really liked that and asked where I got the idea. I said, "Bekah, at the Carriage House." 🙂 That personalized Autumn journal is so beautiful & unique. Loved the colors. Your marinara sauce looks so delicious and very flavorful. During Autumn & Winter I love making Albondigas. Mexican Meatball Soup. The stock is water, chicken broth and tomato sauce. Chop up some zucchini & potatoes. The meatballs are made with ground meat, cinnamon, mint, cilantro, rice and black pepper. So hearty and cozy. BIG HUGS, BEKAH! 🧡

I recently discovered your channel and I am so glad, it was just what I need! I love staying at home, baking, gardening and all those cozy things! I've just watched your 2019 Q&A video and I found a lot of wise words there. Just like you I went to study abroad in England but I eventually returned home in Bulgaria (which I've been pleasantly surprised that you have travelled to). I live in my small hometown and embraced it and find the beauty in small mundane everyday things which most people consider boring. I'm 25 and people keep telling me that at this age I am missing out on life not being in the big city, but I prefer this slow and humble life away from vanity. As you said in your Q&A video "being humble is not the most trendy thing" but I also really do believe it is healthy for the heart and mind. I am sharing all this because finding your channel really helped me calm my mind, it is like a safe place I can always go to. Happiness indeed is found at home! Hi, just now summer will be over! I just enjoy seeing your loving home, the decorations, cooking, and others. It is great that you never give up on your children and your life too. Stay safe and be yourself!
If you want to make an easy no cook tomato dish you take a bunch of really overly ripe tomatoes. Chop them up and add minced fresh garlic, minced fresh onion, salt and pepper, a good amount of extra virgin olive oil and some fresh herbs like parsley, basil, a little oregano, whatever you have and you put it all in a bowl and you take your hand and you smash it all up and then you let it sit all day or overnight and the acidity from the tomatoes will actually cook the onion and garlic and make them less sharp. Then when you are ready to eat, you boil and drain the spaghetti and you top the hot spaghetti with the tomato mixture. Grate some fresh Parmesan Reggiano or Pecorino Romano over the top. It's delicious. It's like a garden in your mouth. 😋😍😊💞

If you want to make an easy no cook tomato dish you take a bunch of really overly ripe tomatoes. Chop them up and add minced fresh garlic, minced fresh onion, salt and pepper, a good amount of extra virgin olive oil and some fresh herbs like parsley, basil, a little oregano, whatever you have and you put it all in a bowl and you take your hand and you smash it all up and then you let it sit all day or overnight and the acidity from the tomatoes will actually cook the onion and garlic and make them less sharp. Then when you are ready to eat, you boil and drain the spaghetti and you top the hot spaghetti with the tomato mixture. Grate some fresh Parmesan Reggiano or Pecorino Romano over the top. It's delicious. It's like a garden in your mouth. 😋😍😊💞
