- Today I am going to show you a very easy recipe for creamy chipotle enchiladas. These are so convenient when you need to make dinner. To make this a quick recipe, you can use rotisserie chicken. The cream sauce only takes 4 ingredients and is versatile. This is gonna be good!

INGREDIENTS
1 1/2 to 2 lbs boneless skinless chicken breast
1 Tbsp chicken bouillon powder
1 tsp onion powder
1 tsp garlic powder
1 tsp cracked black pepper
1 cup water
10 to 12 corn tortillas
5 oz Oaxaca cheese
SAUCE
8 oz softened cream cheese
2 to 3 Tbsp chopped chipotle peppers in Adobo sauce
1 tsp chicken bouillon powder
1/2 tsp paprika
3/4 to 1 cup water

I made this for lunch for my grandkids today it was a huge hit. I added a can of green chili to the chicken while I was cooking it in the crockpot. They all agreed I am the best cook. 😉 Thanks for sharing this delicious recipe

Leftovers tonight, chicken enchiladas tomorrow! I didn't know about heating the tortilla in oil. All my recipes say to put them in the sauce but I like the oil method better. Thanks for all the helpful tips. ❤

You could use sour cream or I like plain Greek yogurt😋
You could also use heavy cream, chicken bouillon, and chipotle for this sauce. You can omit the water or broth if using heavy cream. 😊
