    Cinnamon French Toast Bread
    Ingredients:
    1 1/2 Cups Gluten Free Flour
    1/2 Cup Sugar
    1 1/2 Teaspoon Baking Powder
    1/2 Teaspoon Salt
    1/4 Teaspoon Cinnamon
    1/3 Cup Butter, Melted
    1/2 Cup Milk
    1 Egg
    1 Teaspoon Vanilla (optional)
    Topping:
    1/2 Cup Butter, Melted
    1/2 Cup Sugar
    1 Teaspoon Cinnamon
    Directions:
    Preheat oven to 350°F. In a mixing bowl, mix together all dry ingredients. Melt butter in microwave and add in wet ingredients. This recipe doesn't call for vanilla but you can add in vanilla if you would like. Sometimes I add it, sometimes I don't. Stir just until combined, but still may be a bit lumpy. Use a silicone spatula to mix and fold batter. Do NOT overmix, overmixing will ruin the texture and finish of the muffins. Line muffin pan with cupcake liners. Scoop batter with ice cream scoop into cupcake liners. Bake for 20-25 minutes. When you take it out of the oven you can check it with a toothpick to make sure it comes out clean. Release from muffin pan to speed process of cooling. I put them in a storage container, but you can also use a cooling rack. For the topping, mix sugar and cinnamon in small bowl. In another small bowl, melt butter. Dip the muffins in the melted butter and then in the cinnamon-sugar mixture. This make 6 muffins, but could stretch to 8 muffins without the tops going over. You may have extra topping left over, you can use this for dipping when serving the muffins.
    **Just About Gluten Free All Purpose Baking Flour is a cup for cup all purpose gluten free baking flour. You can use any gluten free flour that is cup for cup.
    *To our non gluten free friends * If you are not eating gluten free you can use the same measurements in this recipe with all purpose baking flour and measure for measure.
