How important is the roasted zucchini/courgettes to stay warm in salad ? Or can it be refrigerated for serving later?
The courgettes need to cool down so absolutely fine to roast in advance and serve later.
Up to where can you make it in advance?
You can roast the courgettes and make the dressing in advance (up to 2 days) but assemble before serving. Enjoy!
