And an affordable "luxury" - you can roast a whole bird and it seems generous and celebratory, without being too difficult, and without breaking the bank entirely

There's nothing like curry leaves. If it were me I would use Thyme or Oregano, there are Indian spices like Ajwan seeds that taste like these and these are nearer in intensity and in the similar ball park to curry leaves than other herbs.
I always found roasting any nuts a nightmare to judge. Then I realised life was easier if using a popcorn popper...........................fool-proof, and quick and the nuts cook/brown very evenly. Peanuts for Thai recipes.................................lush.

Indians have been using curry leaves in their cooking for centuries. These leaves play a paramount role in the curries, etc. so, this is nothing new at all
The wobbly camera angles and nigella stumbling all over the place made it quite unwatchable for me not to mention helluva pretentious. If only she had embraced ageing
