[Ingredients]
Mackerel 800g
Prawns 200g
Pork 200g
Diced Spring Onion
The White End of Spring Onion
Tangerine Peel 1pc
Salt 1tsp
Pepper 1tsp
Tapioca Flour 1tbsp
Starch Water
Bean Paste (dou jiang) 1tbsp
Dried Shallots

Peel the meat from the mackerel
Rinse the meat and bones of the mackerel with clean water

Mince the pork
Cut the prawns into pieces

Put the three types of meat together

Put the diced spring onion into the filling, and add a piece of diced dried tangerine peel
Add a teaspoon of salt and a teaspoon of pepper, then mix well
Add 1 tablespoon of light soy sauce and 1 tablespoon of tapioca flour, stir by hand until the filling is slightly gummy

[材料]
馬鮫魚 800 克
蝦肉 200 克
豬肉 200 克
蔥粒
蔥白
陳皮一塊
鹽一茶匙
胡椒粉一茶匙
木薯粉一湯匙
生粉水
豆醬一大湯匙
乾蔥頭
[釀食材]
處理馬鮫魚
馬鮫魚起肉,用清水洗淨魚肉及魚骨
處理豬肉和蝦肉
剁碎魚肉和豬肉
切蝦成粒狀
撈餡
將三樣剁碎了的材料放在一起
醃餡
切一些蔥粒放在餡裏,再加一塊剁碎了的陳皮
放一茶匙的鹽和一茶匙胡椒粉,然後剁勻
加一湯匙生抽和一湯匙木薯粉,用手攪到餡微微起膠
把餡釀到食材
用生粉水磨平餡面,讓食材和餡黏在一起,煎的時候便不會甩
煎釀豆腐
煎到所有的材料變金黃色然後撈起
熬湯底
把魚骨煎香,再和乾蔥頭爆香
加一大湯匙豆醬,略略炒一下,放下蔥白,再加水
用中小火熬30分鐘
炆釀豆腐
將熬好的湯底倒進瓦煲,放釀好的食材再多煲10分鐘
完成

Hi, I come from a true-blue Hakka family. 80 yrs now. Never heard of putting orange- peel. Besides all of the receipes I saw so far, none has added the all important ingredient- salt fish( mui heong) . A little bit if it goes a long long way..believe me❤
Thank you for your suggestion. 🙂 My mother's side Hakka family uses the conventional mui heong recipe. My father's Hakka family uses Tangerine Peel, to bring in a fruity freshness to balance the meatiness. It is an alternative and I hope to share with more people. 😊

Good day, you can substitute with chicken but of course the taste and texture will become different. But substituting with beef may not taste nice, I think.
