I would only replace sweet sweet canyon with thwomp ruins, In my opinion it’s the much better track. Opinions are subjective tho so I don’t put you down.
TheMarioPartyFan2000 SNES RR has been remade 4 times. This is how Nintendo makes retro tracks, sadly.

And by the way, this video is about Super Circuit, a GBA gane with way more interesting backgrounds than the original Super Mario Kart.
I think the tracks could use some grass and/or trees on the side, especially the parts where there is lots of empty space next to the track, like the first race. But for the rest u did an awesome job!
Looks like I'm not the only person who made Mario Kart tracks in Minecraft with the Starminer mod. Nice job, but I have some tips if you like:
First: use more difference in height, like you did with Rainbow Road. At points where you jump over other parts of the track, make the height feel more important. (Watching down to see the track below)
Second: Try to make it look a bit more realistic. That sounds weird by a Mario Kart / Minecraft crossover, but the tracks themself look better with some background and ground beneath lifted areas.
Third: Try to use the Starminer mod a little more, since you tried making them Mario Kart 8 style, add more gliding sections or Antigravity. Again, you did that quite nice in Rainbow Road.
I don't say that your work isn't good, I just wanted to give you some tips in case you make more tracks.
Ssure2 I dissagree for mariokart super circuit it didnt have gliders or antigravity ad this just feels too modern to me I just feel it ruins the original design in some areas
