Yeah what he does is more of a magic trick with verbal distraction and lots of touches, but that is necessary to perform that on stage with people waiting to be his victim, pickpockets on the street got the advantage that they don't need to distract you as much as he did, since you aren't aware of the impending doom.
You're missing the point. He's using distraction to show how he can substract items from an unsuspecting victim without it being noticed. It doesn't matter if the scenario in this video is realistic as in "he wouldn't get that amount of time or shirt touching in real life", the point is that he can steal things using distraction and that we should be aware that that's the way pickpockets operate in real life.

A real pick pocket doesn’t come up to you & ask you what do have in your pockets while you stand there with your arms out so he can feel his way around your pockets . Anyone can perform what this guy done on stage . I’d like to see him retrieve all this stuff off someone for real on the street.

He’s pickpocketed people easily before, there’s plenty of footage where he doesn’t have as much freedom.
