I dont know if youre actually concerned about the cost ir have thought of this but doing anything at home makes it a little cheaper unless the product you are buying takes too much equipment for a home. Likea flour mill. You can just buy flower. Eggnog is especially good at home because Ive never found eggnog in stores that dosent have cheap ingredients like cornsyrup. Its really easy. If you have a cooking mindset buying expensive vanilla is nothong compared to being charged for it already being in processed food. Then you can use as much vanilla as you can afford in each cup with better quality and cheap almost same amount of time if youre really fast. It can be a big investment though but it dosent go bad. What if you bought really expensive eggnog. Now all the ingredients go bad instead of just the milk. Maybe get extact though. Its kindof hard not to get all the flavor and your moneys worth out of the bean. Its for more experienced chefs i geuss. You could put the bean in vodka to make your own extract

In a bowl beat 6 egg yolks and add in 1/4 C Caster Sugar, should be pale and fluffy, pour some of the hot milk into egg mix to get it to pouring consistency then pour bowl full of egg yolks and sugar into saucepan of hotmilk. Add 1 or 2 vanilla pods cut lengthways seeds scraped out and add all of vanilla pod/s to the saucepan. Heat and stir Sugar crystals should dissolve in 3 or 4 minutes Strain, and transfer to bowl over an ice bath. Add cinnamon, nutmeg, cloves, ginger and 2 Cups of cream. ( runny/heavy/pouring/desert cream. I.d.k. why we are expected to sieve the drink?!¿!
And here was me thinking Eggnog had some kind of alcohol ( spirirs or liqueur I had presumed) in it! How wrong I was I'm going to make it was that 1/4 Cup Caster Sugar?
Just be careful not to get it too hot after going through the trouble of tempering the eggs properly. 😢 don't want to end up with sweet scrambled liquidy eggs

I tried making eggnog once. Even though I was very careful, my electric stove plotted against me and even with a water bath i couldn't keep its temperature range right to cook it without over cooking it and... i got a pint of grainy, eggy eggnod. Horrible. Will never try again.
