This recipe is made with coconut milk. This is a No Agar Agar No Gelatin No Egg Coconut Pudding. It's the easiest, smoothest pudding you could ever make.

2 cups (200g) grated fresh coconut
1 ¾ cup water
OR 1 ¾ - 2 cups canned/reconstituted coconut milk
¼ cup cornflour
½ cup (110g) sugar
½ tsp vanilla extract (optional)
A sprinkling of nuts

For extracting coconut milk, you have to use warm water?
It would be better to use warm water, Lili, because this makes it easier to extract the coconut milk. Though you could also use room temperature water.
How much of cornflour did you use in grams
Maria, it's such a small quantity of cornflour that you would be better off measuring it. But if for some reason you would rather know the weight, that would be around 30g (for 1/4 cup) .
How much of coconut powder to use instead of fresh coconut
Lygia, you could use 70g of coconut milk powder (not desiccated coconut) and dissolve it in 1 and 3/4 cups of warm water.
Will a pinch of cardamom powder or vanilla essence give it a nice flavour?
I've added vanilla extract. But you could also use rose essence. Ground cardamom however could spoil the pure white look of the pudding.

It's best to store it in the fridge. Besides it's a nice pudding to enjoy cold.
