Good luck! My Oma used to make a stollen every year. It was always delicious, but a lot of work for her. I miss the stollen, but I miss her more. (Fyi, Aldi sells a decent stollen during Christmas season, just in case it doesn't work out.)

Dutch home baker here. Since we're pretty close (don't know where you are in Germany exactly) try finding and using 'speculaaskruiden' (speculaas spices). Not a set recipe, but a mix of mainly cinnamon, ginger, cloves, cardamon and white pepper. Authentic Dutch and gives a very 'Christmassy taste' to your baked goodies. Just adding: Put the left-over vanilla pod peels in a bowl of sugar and you'll have the most wonderful vanilla sugar. The longer you let it be, the better the taste.

The thing with most German christmas cookies is you should not eat them immedietly. My mother always puts them into boxes, at best with an half fresh apple, and leave it there for some days or even weeks. Then they will soften and get so much better.

Yes. You could also give the Stollen a butter wash (makes it being less dry) after baking and cooling down, then let it rest for some weeks, then put the powdered sugar (representing Baby Jesus' swaddling clothes) on it for finally serving it.
Brush on melted butter and put on powdered sugar. Let it set - it forms a crust that will keep moisture inside. It can last a few months with a classic recipe this way. That's why you start baking then in October - same with Lebkuchen dough. 🎄🧑🎄

Raw flour is usually not a problem in Europe, the food safety is really good for raw flour, eggs are higher risk in raw dough but generally considered pretty safe, but most europeans usually dont eat a lot of raw egg (source: I an north european)
I thoroughly enjoyed watching you baking all these Christmas goodies! I just did two days of baking Plätzchen myself. Some hint for tasting them: cookies take at least two days to develop their flavour. After a week they taste even better, but the ones that survived four weeks last year tasted amazing!

It doesn't rise anymore *in* the oven, so it's *really* important to fold in the hazelnut flour gently to preserve as much of the bubbles as possible. The more aggressive you are, the flatter they will be. When you cook them, it just sets the cookies so they won't deflate any more. They look delicious, btw!
As a kid, we always licked the beaters, spatulas, spoons, bowls after mom made cakes & cookies & other sweets! I let my kids do it & now my grandkids. We're still good!
Im not sure if you have a product called yummy dough. Its vegan and you cam eat it raw. And Pillsbury makes a cookie dough thats safe to eat raw. Im not vegan and i would still lick the beaters with homemade dough. But these are good alternatives if your pressed for ingredients😊

It really depends on where you are if raw egg is safe or not. Generally in the US, the answer is no because there is a risk of salmonella. I know... I can't remember if it's Japan or India or some other Asian country, but I remember that their eggs are safe to eat raw because there is some difference in the egg production. Sorry I'm not a better resource but that's why Google exists. 😊

Buried Cherry Cookies You will need One 10 ounce jar maraschino cherries ½ cup butter or margarine 1 cup sugar ¼ teaspoon baking soda ¼ teaspoon baking powder ¼ teaspoon salt 1 egg 1 ½ teaspoon vanilla ½ cup unsweetened cocoa powder 1 ½ cups all purpose flour 1 cup semisweet chocolate pieces (do not substitute) ½ cup sweetened condensed milk Drain cherries, reserving juice. Using an electric hand mixer or a stand mixer, beat butter on medium to high speed for 30 seconds. Add sugar, baking powder, baking soda, and salt. Beat until combined, scraping the sides of the bowl. Beat in egg and vanilla until combined. Beat in cocoa powder and as much flour as possible with the mixer. Stir in any remaining flour. Shape dough into 1-inch balls (if dough is too dry to shape, knead in water a quarter teaspoon at a time until dough becomes workable). Place balls 2 inches apart on an ungreased cookie sheet. Press a thumb into the center of each ball. Place a cherry in each center. For frosting, in a small saucepan combine chocolate pieces and sweetened condensed milk. Cook and stir over low heat until chocolate is melted. Stir in 4 teaspoons of reserved cherry juice (if necessary, frosting can be thinned with additional juice). Okay, I love almonds, so I tend towards cookies that use almonds, or switch out hazelnuts for almonds. And yes to eating raw dough. Honestly, being allowed to lick the mixing sticks clean is something every German child loves and takes with them into adulthood.
Aw, these all bring back so many childhood memories making a lot of those with my mom. We called the spitzbuben gefüllte Plätzchen. I always thought the paper on the hazelnut cookies was weird as a kid, they were the last ones I would eat. My favorite were the Nusstaler cookies. After my mom died I used to spend a week before Christmas making the doughs and baking all the traditional cookies for my brother, sister and friends. Truly a labor of love. My German born mom used to make those crescents almond cookies.She tried to make her own almond flour because back in the 60s and 70s it wasn’t sold in stores and no Amazon. My mom said the best Stollen was Dresden. I’ve never had it from there. But I love marzipan and Lebkuchen, I was born there, in Nürnberg. I want to go back for a Christkindle Market someday.

I'm a German Jewish. My grandparents fled Germany in 1940s and came to the U.S. My oma made lebkuchen that needed to be fermented for a year, or so my family tells me. Marzipan, stollen, lebkuchen, all of these are dear to my heart.
a year is really quiet a lot, 1-2 months should do it. It's not fermentation, it's just taking the humidity from the air.....and after some time, they are drying out again.

Love this video! Reminds me of my Danish/French grandma's stollen making. She got her recipe from her Prussian MIL. Annual ritual that took most of an entire day. She didn't use marzipan paste, so it was helpful to see how Germans add it. Found a block of the paste at Lidl a couple of weeks ago and saved your video so I can review the steps.
Usually the Stollen gets covered in lots of melted butter after baking and befor the powdered sugar gets applied in many layers. Then it must sit a week minimum to soften inside. Best you check some different recipies online before you decide which route you want to go. Happy baking! 😊

After Bakung the Stollen you usw liquide butter on top of the Stollen and that you Sprinkle wirh powdered sugar. This combination helps that the Stollen won‘t dry out while you let it rest. Resting helps to create the typical flavor of Stollen

the christstollen is also a thing in the netherlands under a similair name: kerststol basicly means the same thing but there is one difference that being is that the marzipen is just one pill in the middle of the bread and i isnt just spread out

I've seen ppl recommend microwaving the flour for a bit to get around this, but it just made it clumpy so I didn't try it again 😬😂

Shape dough into 1-inch balls (if dough is too dry to shape, knead in water a quarter teaspoon at a time until dough becomes workable). Place balls 2 inches apart on an ungreased cookie sheet. Press a thumb into the center of each ball. Place a cherry in each center.
For frosting, in a small saucepan combine chocolate pieces and sweetened condensed milk. Cook and stir over low heat until chocolate is melted. Stir in 4 teaspoons of reserved cherry juice (if necessary, frosting can be thinned with additional juice). Spoon 1 teaspoon of frosting over each cherry, spreading to cover.
Bake in a 350 degree oven for 10 minutes or until the edges are firm. Cool for 1 minute on the cookie sheet. Transfer to a wire rack to cool completely. Makes 42 to 48 cookies.

Aw, these all bring back so many childhood memories making a lot of those with my mom. We called the spitzbuben gefüllte Plätzchen. I always thought the paper on the hazelnut cookies was weird as a kid, they were the last ones I would eat. My favorite were the Nusstaler cookies. After my mom died I used to spend a week before Christmas making the doughs and baking all the traditional cookies for my brother, sister and friends. Truly a labor of love. Actually, I find it more likely for German BF to having success in baking macaroons than Uyen. Germans can be good at following directions, whilst Uyen tends to freestyle her way through the kitchen and disliking the dishes she has made 😂
My German born mom used to make those crescents almond cookies.She tried to make her own almond flour because back in the 60s and 70s it wasn’t sold in stores and no Amazon. My mom said the best Stollen was Dresden. I’ve never had it from there. But I love marzipan and Lebkuchen, I was born there, in Nürnberg. I want to go back for a Christkindle Market someday.

I'm a German Jewish. My grandparents fled Germany in 1940s and came to the U.S. My oma made lebkuchen that needed to be fermented for a year, or so my family tells me. Marzipan, stollen, lebkuchen, all of these are dear to my heart.
Sounds interesting to have the dough fermenting a year. In fact Lebkuchen have to be baked long time ahead. They need weeks to soften.
Ferment for 8 days as per our fam
a year is really quiet a lot, 1-2 months should do it. It's not fermentation, it's just taking the humidity from the air.....and after some time, they are drying out again.

Love this video! Reminds me of my Danish/French grandma's stollen making. She got her recipe from her Prussian MIL. Annual ritual that took most of an entire day. She didn't use marzipan paste, so it was helpful to see how Germans add it. Found a block of the paste at Lidl a couple of weeks ago and saved your video so I can review the steps.
Usually the Stollen gets covered in lots of melted butter after baking and befor the powdered sugar gets applied in many layers. Then it must sit a week minimum to soften inside.
Best you check some different recipies online before you decide which route you want to go.

After Bakung the Stollen you usw liquide butter on top of the Stollen and that you Sprinkle wirh powdered sugar. This combination helps that the Stollen won‘t dry out while you let it rest. Resting helps to create the typical flavor of Stollen
Richtig gut wird ein Stollen, wenn er in Alufolie eingepackt 4 Wochen zieht, nach dem Backen. Auch kenne ich das eher so, das der Teig ohne Marzipan geknetet wird, Flach auf dem Tisch ausgebreitet, das Marzipan in die mitte längs gelegt wird und der Teig von beiden Seiten über das Marzipan umgeschlagen. Dann das Teigstück um 180° drehen, etwas ruhen lassen und dann backen.

the christstollen is also a thing in the netherlands under a similair name: kerststol basicly means the same thing but there is one difference that being is that the marzipen is just one pill in the middle of the bread and i isnt just spread out
yes spreading doesn't make much sense. You can put the almonds directly, especially bitter almonds. Marzipan spread is just almonds with sugar.
