I'm from the US, but my grandmother is from Germany and she always made Stollen for Christmas. She doesn't make it anymore because it's too hard for her, but I'm going to try making it using her recipe this year :)

Dutch home baker here. Since we're pretty close (don't know where you are in Germany exactly) try finding and using 'speculaaskruiden' (speculaas spices). Not a set recipe, but a mix of mainly cinnamon, ginger, cloves, cardamon and white pepper. Authentic Dutch and gives a very 'Christmassy taste' to your baked goodies. Just adding: Put the left-over vanilla pod peels in a bowl of sugar and you'll have the most wonderful vanilla sugar. The longer you let it be, the better the taste.
My german classmate who I knew only for a month, made cake for me for my birthday. I was so touched. Even saying thank you was not enough to show my gratitude.

Some hint for tasting them: cookies take at least two days to develop their flavour. After a week they taste even better, but the ones that survived four weeks last year tasted amazing!
The thing with most German christmas cookies is you should not eat them immedietly. My mother always puts them into boxes, at best with an half fresh apple, and leave it there for some days or even weeks. Then they will soften and get so much better.

Introduced my son to marzipan when he was 4 and one-half. He's been a huge fan ever since. He's even indoctrinated his children. His wife helps them make marzipan fruits and veggies. Best thing ever? If not, it's darn close.
I love this channel because I get to learn about my German heritage AND about Asian foods which have been a godsend dealing with this damn autoimmunity. Marzipan is a tradition around here too. I never had it before moving to Canada.

Watching this really makes me miss my ex'es mom (who was like a mom to me) who has passed and her delicious holiday cookies. They were always so good. She made the crescent cookies and they had such a delicate crisp when you bit into them and then they melted in your mouth.

She didn't use marzipan paste, so it was helpful to see how Germans add it. Found a block of the paste at Lidl a couple of weeks ago and saved your video so I can review the steps.
There are many different regional and even family-specific traditions on how to bake a Christstollen. Some use marzipan, others don't. The Rhenish Christstollen in the very West of Germany is also without marzipan, while the Dresdner has a lot of it.
Usually the Stollen gets covered in lots of melted butter after baking and befor the powdered sugar gets applied in many layers. Then it must sit a week minimum to soften inside. Best you check some different recipies online before you decide which route you want to go. Happy baking! 😊
Oh boy! While I write this parts of it I'd do in German since I lived there for 9 years. My grandmother (of the heart) lived in Baumholder. She was the only person I knew and considered my grandmother. I still sing Silent Night in German however now I start in one language and finish in the other. Im not sure if you have a product called yummy dough. Its vegan and you cam eat it raw. And Pillsbury makes a cookie dough thats safe to eat raw. Im not vegan and i would still lick the beaters with homemade dough. But these are good alternatives if your pressed for ingredients😊

Actually, I find it more likely for German BF to having success in baking macaroons than Uyen. Germans can be good at following directions, whilst Uyen tends to freestyle her way through the kitchen and disliking the dishes she has made 😂
the christstollen is also a thing in the netherlands under a similair name: kerststol basicly means the same thing but there is one difference that being is that the marzipen is just one pill in the middle of the bread and i isnt just spread out

Love the boy band joke 😂😂😂 By the way, for the Haselnusdmakronen, the raising agent is the bubbles in the egg whites. It is a form of physical leveling. It doesn't rise anymore *in* the oven, so it's *really* important to fold in the hazelnut flour gently to preserve as much of the bubbles as possible. The more aggressive you are, the flatter they will be. When you cook them, it just sets the cookies so they won't deflate any more. They look delicious, btw!

Okay, I love almonds, so I tend towards cookies that use almonds, or switch out hazelnuts for almonds. And yes to eating raw dough. Honestly, being allowed to lick the mixing sticks clean is something every German child loves and takes with them into adulthood.

Yummmmm! Marzipan was my nickname as a kid I love it so much. In England we rolled the marzipan out and liquor filled cakes were wrapped in it to seal them before icing. It prevented the liquid from discoloring the icing. We also made painted sculptures out of it.

you can also decorate the cookies after you baked them, and you can use poudered sugar and water as the mixture to which the decorations stick to.
