Thank you for the suggestion! Although there is currently not a setting for this, the "Posted XX/XX/XXXX in Category X" line can be hidden for a specific post type by editing the post type, navigate to the Detail Page Design tab, and paste the following in "Insert Additional Code for Embeds, Schema Markup etc.":

}
