My parents used to work in Dehong all year round. They would bring us a lot of cured beef cooked over fire each time they came back home. The taste is memorable.
It happened that a household in the village slaughtered a steer, so I bought some beef and cooked it over a fire to make cured beef. Then I made two dishes my mom likes: Cured Beef Cooked on Fire and Cured Beef Shreds with Lemon Slices.

What a beautiful way of rural life. Peace and tranquility all around, no vehicles, no pollution, no noise, no stress. Just good old buffaloes, butterflies, greenery and of course good food. Man would achieve enlightenment at such places.

Oh man! That’s such a beautiful piece of beef. Love this series of videos. I personally liked only Sichuan style dishes until recently but I’m starting to explore more of dishes from other regions of China now.
Try cuisines from the nation's Uyghur and Hui minorities - Chinese Muslim food
Not gonna lie my favorite is Sichuan dishes, not really a fan of salty dishes like Shanghai style, I prefer savory or spicy.
@@thisiskevin1000 mom's side of the family is from xinjiang (not ethically but still), da pan ji (big plate of chicken), uygher style naan, lamb kebab, lanzhou la mien are among my favorite foods.
I live in Rongjiang, Guizhou for the last 3 years and I just love the chinese food. Have been home to the countryside with students and experience their lifestyle, hospitality and food...absolutely loved that. Now I am Sichuan for the New Year with my friend, visiting his family. Awesome experience and great hospitality.
