The reason Ganesh is released into water, is because Shiv, his dad, gave Ganesh North India as his kingdom, and South India to his other son, Karthikeya. When Ganesh visits his brother in the South, he stays for 9 nights (Navratri) and must leave before he overstays his welcome - and is cast into (usually flowing) water. Ganpati visarjan (casting into flowing water) used to be a private celebration in each household in the South. It became a more public celebration when Bal Gangadhar Tilak wanted to show the power of the people against the atrocities of the. British Raj in the battle for independence. The first Ganesh Visarjan happened on the beaches of Mumbai and became a MASSIVE big deal in cities like Pune, Kolhapur, Nasik, etc. The Sarvajanik (public) Ganpati Visarjan (immersion) tradition continued even after the British were kicked out of India.

The reason people formed the big pyramid in Krishna Janmashtami is cause of the stories of lord Krishna. When krishna was a little kid he used to finish all the dairy products like curd, butter, etc really quick as they were his favs. So Yashoda his foster mother would keep all the food really high so he couldnt reach it. So Krishna would call his 3-4 friends and form a pyramid to get the food. Thats why people celebrate it by tying a pot filled with curd really high and people form a pyramid to break the pot. Also not everybody can participate in the pyramid it requires people who are skilled for it.
