    Interesting timing. I just caught a yellowfin tuna off Moreton Island yesterday and had fresh sashimi for breakfast this morning. Fresh tuna and avo sushi for lunch and getting some smoker chips for some smoking action tonight.

    Briggsy it's called beurre noisette, when you brown the butter. It imparts a nutty taste to the fish. Awesome catch n cook dude. Perfect collab with the NZ fushing cuz ey!!!!! Yewwww🤙

    On the west coast of the US these are called these yellowtail, or their actual species name, yellowtail amberjack. its funny, kingfish to me in florida are king mackerel... which are extremely similar to what Australians call Spanish mackerel... but we have a Spanish mackerel that only gets about 24" max. then you ask a Florida fisherman to take you yellowtail fishing and you head to 10' of water and catch 12" snapper haha.
    but definitely let yellowtail amberjack cure, uncovered in the fridge for one to two days if you want the ideal texture. thats what sushi restaurants do. my favorite fish to eat and fight of all time. made me sad to see the head and collar thrown away, that is my favorite seafood of all time. better than tuna, better than Dungeness crab, better than grouper. marinate the collars in miso and soy, then broil and its so damn good. its called hamachi Kama at japanese restaurants. so many people care about fish conservation and then just throw the head away or use it for crab bait when its the best tasting part. try to make a stew out of it if you cant handle eating the head. you will not be let down and more of the fish was prevented from going to waste. I cant say enough about how damn good yellowtail amberjacks are to eat. only thing that comes close from what ive tried is African pompano.

    I used to go on a charter boat that wouldn’t get back to port till 9:30pm and I would go home and cook right away also. There’s nothing better then fish that’s only a few hours old.

    Thank you for using ikejime for this king fish! But the processing method for sashimi is not the best. Sashimi needs to be oxidized and aged for 6-9 days to be the sweetest

    you should freeze the fish first before eating raw; lots of intestinal diseases you can get.

      Some people just catch and release because their not going to eat it. They do it for the sport more then anything but some people actually do eat what they catch 👌

    It’s funny how you guys call that a kingfish in Australia. In the states and Mexico they are called yellowtail. What we call a kingfish is much different looking.

    fried fish would taste more "fishyer" because of the natural nutrients being fried and also the salt would bring out the rawness of the fish

      To remove the fishiness, add crushed fresh turmeric, salt, and a bit water to marinate the fish for a few minutes and its ready to be fried

    Super caught, but you can't cook such a beautiful fillet with butter, extra virgin olive oil, seared 1 minute per side. 😱😂👍

    About the salt!!!!
    We have the same problem in the southern parts of the USA. Sounds crazy but put uncooked rice in the salt dispenser BUT it’s got to have a perforated top with holes smaller than the grains of rice. Salt won’t get clumpy.

    I spent many years in Japan, on Okinawa and Tokyo/Yokohama region. during my deep sea fishing I noticed that the Japanese fishermen quickly bleed the fish, while it is still alive. Try doing that on your next Tuna or king fish, eat Sashimi style I think yall will like it.

      Yes. We call them yellowtail. Our kingfish looks way different

      Very similar, different subspecies, yours have a more narrow shape and a more pronounced shape, nz/aus species are much fatter and get bigger much more frequently
