Watching this movie somehow propelled me to starting practice piano again, and I've been searching for this piece for a while, thank you very much for sharing!
It gives a much more solemn and sophisticated feel which conveys the more sobering themes of the movie well. As well as more elegant character designs.
My guess would be that it is easier to animate because it's simpler and it is needed for this movie. The strength of this movie lies in the unspoken movements of the characters which are much easier to convey when you have this style of design.
I'd like to think it's because of the "Liz to Aoi Tori" story. The story was written like a children's storybook with watercolor medium and the story of Nozomi and Mizore parallels the story in Liz to Aoi Tori so for consistency of storytelling it's a good call to have both worlds have the same art style.
Search “Liz and the bluebird etude piano sheet” on Google and you should find it. Not sure if it’s completely accurate though; I’m a new piano player, and can’t play it

It is not a beginner piece lol. I tried learning it and nah looks harder to do since while I had to write in the fingerings
