How I smoked 100 pounds of Chicken Quarters by myself.

  • If you need to cook a lot of chicken, I mean a lot of chicken, then this video is for you. In this video, I share my process for smoking a large amount of chicken without any help. Follow these instructions, and you can do it too!
    In this case, it was my Son's 12th Birthday, so we had a day at the beach followed by a sleepover. Well, as soon as we got home and were settled, I noticed it started to get hotter. The A/C just went out, and we got a house full of kids. We had to move everybody downstairs where it was cooler. I still had to clean 100lbs of chicken quarters for a good friend's party the next day.
    In the middle of me cleaning the chicken and one of the rascals decided to take a dump in their pants.🤣 Thank goodness my Wife is a trooper because I couldn't stop in the middle of cleaning the chicken. She took care of everything and got him cleaned up. 🙏🏾 I was able to get everything done, and his party was a success! Please let me know in the comments if you have any other questions.

    Man, this is right on. You got it all figured out. I do many big cooks alone myself and you work similar to myself. My routine gets knocked off center when my coworkers want to help. I explain to them “my process,” watch them perform it and once I feel comfortable, I leave them to it. Periodically checking in on them. Then after an hour or so of them working on the protein, I recognize they are not doing anything I showed them. They’re doing what they do at home, and man I can’t stand working with people who carelessly handle food prep. So if have spent as much as 36 straight hours cleaning/prepping chicken and ribs.

    The slime from under the skin, and the thick blood inside the back bone should be removed as well. Or, just remove the back bones and use them for bone broth/stock. Nice video!

    Why is my skin tough and rubbery when I'm smoking chicken? What am I doing wrong?

      Normally one of two things. The chicken is too big which means the skin is thicker or you need to cook at a higher temperature.
