One of my favourite ones had to be Burgundian laungage. I'd imagine this as more roman than germanic one, definitely used latin alphabet, with some special letters copied from French and German. It woudl've been spoken in eastern France, some western cantons of Switzerland, southwestern Germany and even in Luxembourg and Belgium.

Pretty Sure Apenine greek already exists, it's just allot smaller and mostly limited to the far south of the apenine peninsula and sicilly.
There are Griko and Calabrian Greek, yet their two distinct languages and with less territory
