Made my first batch of double chocolate ice cream this week. Now I am more of a vanilla fan than chocolate so this was more of an experiment. Didn't realize chocolate doesnt easily dissolve in liquid. Turned out grainy. Also, need some mixins and nuts to make it more interesting. Might try hazelnuts next time
So sorry to hear that. One question: did you blend the ice cream mixture right before churning it, as instructed in [03:49]? It makes all the difference between a smooth texture vs. a grainy one.
@theicecreamqueen I did not. Totally forgot to do that. Usually I age the base overnight in a covered bowl, which makes it easy to whisk or blend before churning. This time I used a fancy Le Parfait glass jar for aging the base and pour right out of it. As I was pouring into the churning machine, I looked on in horror as both types of chocolate (my expensive and fancy dutch powder and melted chocolate slab) had grains of undissolved grittiness. Learnt my lesson!

For some reason the ice cream mixture won’t churn and stay as the soup form even after 30 mins of churning. Tried 3 times. Mixture fridged overnight and bowl is cold enough but still didn’t churn. Not sure what happened 😢😢😢😢
So sorry to hear that! Assuming that all ingredients and quantities were as the recipe requested, I think that the issue must be caused by weak gelatin. Can you send me a link to the gelatin you used? Or you can try to omit both the vodka and the gelatin. Please let me know.
The softened gelatin sheets are added at 2:17, immediately after the xanthan gum. I added the vodka at 2:58, as the blended mixture had cooled slightly by that point. I understand this may be unclear, so I hope this clarification helps. Thanks for asking.
