Meat Lasagne: Classic Southern Italian Version (e31)

  • Buon giorno a tutti! In this episode, Nonna Mia, la nonna di tutti (everyone's grandma), is joined by Emily, the first of 7 grandkids, to whip up a beautiful lasagne for Nonno's birthday. Since you can make this dish in advance, lasagne makes for the perfect celebratory meal so you can focus more on visiting than preparing. In her video, Nonna makes a very large lasagne, for '12' people; 12 very hungry Italians. Below follows a recipe that serves 6.
    Ingredients:
    - about 3 liters of tomato sauce (sugo)
    - a 500-gram box of no-boil lasagne sheets
    - extra virgin olive oil
    - 1 onion
    - 3 cloves of garlic
    - 1 pound of ground meat (pork, beef, sauce, or blended to suit)
    - 1 teaspoon of salt
    - 1 teaspoon of oregano
    - 2 to 3 teaspoons of flour
    - 4 eggs, boiled and grated
    - 1/2 pound of mozzarella, grated
    - 1 cup of grated parmesan cheese
    To help spread the load, Nonna's legendary tomato sauce was made the day before and you can visit her 'sugo' video for details on how to prepare a homemade sauce.
    Nonna sautees the chopped onion and 3 minced garlic in extra virgin olive oil, then she adds 1 pound of minced meat. You may use beef, or pork, or a mixture. It is also common to use a sausage meat blend. Nonna opted for minced pork. She also recommends sprinkling 2-3 teaspoons of flour, to help break the meat into more uniformly smaller bits. Sprinkle a teaspoon of salt and oregano on the meat and continue to brown, about 6 or 7 minutes.
    In separate bowls, Nonna prepares 4 grated hard-boiled eggs, a half-pound of grated mozzarella cheese, and a cup of grated parmesan cheese.
    Nonna adds a layer of tomato sauce to the base of her pan, then places no-boil lasagne sheets on the base, slightly overlapped. She then coats the sheets with some tomato sauce and begins the layering processing by adding the ground meat, egg, mozzarella, and parmesan cheeses before repeating the process again, to create a four-layer lasagne. She tops the final lasagne layer with more sauce and sprinkles a generous amount of parmesan cheese.
    Nonna covers the pan with aluminum foil and bakes the lasagne at 350F for about an hour. You want the sauce on the fringes to bubble.
    Remove the foil and sprinkle mozzarella cheese until melted, approximately 5-10 minutes.
    Let the lasagne rest for approximately 15-20 minutes, then serve. Nonna suggests that you ladle a small portion of sauce, and sit the lasagne square on top of the sauce.

      Yes, many here in Italy also put ricotta. And we could say that almost everyone puts mozzarella. Many, for example, add Béchamel sauce. But as usual and as for other typical dishes, in every family there is a different method, a different version, and they put different ingredients. You never find a “standard” dish that is the same in all of Italy. Each region, each small village, but we should say each family, has its own way, has its own version. In the end everyone makes it according to the tradition of his family.

      Here, for example, Nonna Mia put the minced meat separately. Usually the minced meat is placed in the tomato sauce. And so as I said, everyone has their own method.
