That's a great idea, one of my favorite pieces of trivia max taught me was of an ancient Rome spice that simply went extinct, and that got me thinking about how much actual flavors and the personal taste of people has changed The use of salt changed, how they had spicy food before actual peppers were discovered, spices that were common and now are unheard of... so many possibilities

Don’t downplay the importance of finding that right Pokémon, José! I know you do a million other things behind the scenes, and appreciate it all! But that little inside joke with the audience is one of those details that makes a show like Tasting History so engaging and fun. It makes us feel connected to what you’re making and to one another as part of an audience. It’s part of the personality of the show and we love it.
When you two spoke about doing an episode on Japan it reminded me of something my mother did while we lived there in the late 1950s. There was a group of nuns in Tokyo who, until 1949 had lived in China. They escaped from China during the Revolution there. When they arrived in Tokyo they realized they needed to support themselves so they taught Chinese cooking. My late mother took their classes, and we were all glad she did. On my 14th birthday, she made an 8-course Chinese dinner for about 15 people, and it was fabulous! I've wanted to find out about the nuns, and check to see if they are still there and still teaching the cooking lessons, but not sure where to look.
Theme month suggestion: Immigration, maybe recipes that were brought here by immigrants and have become staples of the American diet. Jose, did you have to choose which Pokemon you would take if you evacuated? It must be like picking a favorite child. Max, I'm also waiting impatiently for Civ VII. I've played every release since Civ II and would hate to count how many thousands of hours I've played. So glad to you both are safe from the fires and I hope 2025 gets better for everyone.
I think that American staples that were brought by immigrants might be a bit broad. I wonder if there's a way he could so something about immigrant foods - stuff like American-Chinese food, or corned beef being seen as Irish, and other ways that cultures adapted to make a new cultural food.
I didn't grab a single plush but next time I will grab the Tasting History Pikachu someone made Max, and the first gift I got from Max which was a Bulbasaur, my favorite.
Theme suggestion: Mardi Gras/Carnivale, Lent, Easter cycle. This is one of the years where Western Easter and Eastern orthodox Easter are on the same day. Some Lenten recipes from history are really creative and good, and the customs are so varied among different cultures for carnivale, lent, and Easter.
A theme idea for next April, 2026, would be to commemorate Queen Elizabeth II's 100th birthday with recipes from the most recent royal houses: Tudor, Stuart, Hanover, Saxe Coburg-Gotha, and Windsor.
That's true. But to be fair they probably filmed this a few days ago. It's been February for over an hour now over here, so he made me stop for a minute! LOL

Hey, Max! About your birth certificate: You can go to the town/city hall where you were born and ask for a copy. It will need to be notarized but they are qualified to do that there. There may or may not be a small fee. You also can get a copy of a marriage license, death certificate or divorce certificate. But I’m sure with all that research you do, this all would come to you once you stopped to think about it. ❤
I’m just curious; when do you need an actual hardcopy of your birth certificate in USA? I’m norwegian myself, and have never ever needed my birth certificate for anything - thats why I wonder :)
@@Ane_Rikke You use it as proof of citizenship for certain things, like applying for a US passport(you actually include your birth certificate in the packet when you apply for the first time) or to legally prove who you are for things like a driver's license, tax forms/eligibility to work in the USA at a new job or marriage license. I use mine when I go to renew my driver's license because for whatever reason, my DMV has issues accepted my old license as proof of who I am.

@ I guess it might me a more common thing to always have a valid passport here (and when I renew it, they accept the old passport as valid ID even if expired) Also my drivers licence is valid ID and up until five years ago they were valid until you 100th birthday, now they are only valid for 15 years before having to update - but that can be done digitally, and sent directly to my official home adress based on the prior expired one). I just checked, and if I want a print out of my birth certificate I can do that logging in digitally with my national digital ID - and have it sent to my official home address. Yes - different countries, different systems; that was why I was curious as to what you used them for. Thank you again for answering :)

Jose, your garden looks amazing! Max showed some of it when it was raining and it looked gorgeous. I'd love a garden tour. We love Tom Bihn for travel bags, suitcases, etc... I got my son one of their backpacks his sophomore year of college and he's still using it over a decade later. They are well made and durable, worth the expense, and a wonderful company. Immigrant cuisine! I’d like to see a series on immigrant foods that poor immigrants brought to America, that they ate in their home country or on the trip, that have become extinct in their home country. So, American Norwegians eat lutefisk, but it is no longer an ordinary food in Norway (it is stockfish soaked in lye that was a 19th century poverty food)- but where did it come from and why did they eat it? I think there are similar Irish American and German American food that were preserved by immigrants, but have died out in their home country. Pasties in the upper midwest would be another one. You could look at the history of the food, why people preserved the tradition in the new country, and why it is no longer appropriate in the country of origin. And you could cook the original dish before transport to the us. Just an idea! So happy you are doing well, and I’ll be watching!

I had stayed at the Gallert hotel in Budapest. Even if you don't stay there, i suggest spending a relaxing afternoon enjoying the baths offered there indoor and outdoor. The history of the hotel itself is fascinating. Also, outside the hotel on the right hand side is an easy walking route that brings you to the top of a cliff with an amazing view of the city and the Danube river.
There is also a fountain right next to the hotel where you can taste all the thermal water, each tap is from a different thermal bath. Not sure it is in operation during February tho

Glad you are both safe! As a doctor, the most common dietary advice I give is about increasing iron in the diet, and reducing cholesterol. For the history side of these topics you could maybe go back to the 1920s and talk about Popeye’s love of spinach. Unfortunately it’s not as iron-rich as the cartoon would have you believe, so for the very richest source of iron you could go even further back and discuss what we in the UK call black pudding (but here, you might lose some of the audience!) For cholesterol you could either cook the greasiest dish you can think of, or discuss dietary phytosterols which lower LDL cholesterol.

As a hotelier, might I sugest dishes and drinks created by or attributed to hotels? The Waldorf Astoria alone created several dishes that are common and popular now. Btw Jose, I know exactly what you went through with dress shoes in cold weather. As a kid we traveled alot, dad worked for United so we had flight benefits, and we would visit family in Alaska. But as the family of an employee we had to dress in full suits no matter where or when we went. So alaska in the winter with flat sole dress shoes... Yeah, my brother and I spent alot of time trying to get across the airport parking lot sliding on our backsides. And since my mom never bought us shoes suitable for snow, because we lived in the Bay area and snow was a once in a decade thing, once a year my brother and I turned in to the both the youngest and best dressed latino bob sledders in perhaps all of the northern hemisphere.
Samsonite makes good ultra light suitcases for travel and I usually just stick stickers on them for identification so you can probably buy large vinyl pokemon stickers and slap them on. You can put your lego creations in acrylic boxes and display them on a shelf. I think that would be nice. Some people make specific boxes with lighting and everything for certain legos. Also, if you live in an area where disasters happen its good practice to have all important documents in a folder or plastic bag in a drawer ready to go. birth certs, medical records, passports etc.
You can make your own Pokemon suitcase if you can't find one! I'm a huge FFXIV fan, and my sister decorated my new suitcase with the Red Mage class symbol (since it's my favorite class). (She has the art talent in the family, hence her doing it rather than me.) ❤ Loved this episode; it's always great to see you just sit and chat for a bit. Jose, if you've never experienced the David Austin rose "Abraham Darby," check it out. One year ours put out 60 blooms at one time! And it's not really that big a bush! The smell is lovely and fruity. It's one of my favorites out of the huge number of roses we've grown through our several decades at this house. I really enjoy seeing your plants, so more garden videos, please!
Sadly, I believe that one is discontinued. I've kept an eye out for thatone and Lady Emma Hamilton, also discontinued. I can't be too upset though, I have 90 varieties planted (with some duplicates) and more coming in. My favorite smell is the Old Rose scent, but I do like fruity ones. Myrrh and tea fragrance have been an adjustment hehe
Oh no way you’re going to Melk, I’ve been there and it’s BEAUTIFUL, I hope you have fun throughout Europe!! A fun food story from there, we stopped at a restaurant for lunch and when we got our plates we picked up knives and forks but the server said “nein ahhh…. ‘Finger-food’” and smiled, so we happily switched to eating with our hands! Well my friend picked up a big pile of what he THOUGHT was shredded cheese and tossed the whole thing in his mouth…. only to realize it was raw horseradish meant as a pallet cleanser, and spent the next few minutes coughing it up🤣🤣
Perhaps for a themed month, you could look at what the sanatoriums/psych wards of the 1800s/1900s offered for food for patients. I know some of the larger ones acted more like prisons and ended up being abandoned in the late 1970s-80s. Each sanatorium varied from state to state and even from country to country. Glad you guys are safe and sound, keep up the great work!
I don’t know about a theme, but the episodes I’ve really enjoyed were ones that showed what recipes and dishes looked like before another cultures ingredient or cooking technique were introduced. So like pizza before tomatos or Japanese noodles from before they opened their borders. Something along those lines :)

Good to see you’re both well. How about this idea for a theme… A few years ago I found an early 20th century cookbook which was included when you bought your wood cook stove. I’ve tried some of the recipes with hits and misses, and did it on my regular gas stove. That was fun, but made me think about recipes which came with kitchen equipment. Perhaps you could do a series on family recipes and ask your viewers to submit a family recipe for you to do. Admittedly, many family recipes are simply recipes we made for years but were sourced from magazines, old cookbooks and/or “stolen” from friends. 😉 Another subject count be pressure cookers and how they affect recipes. I’d be interested in how pressure cookers were invented and how instant pots are related.
That is a really nice back yard. It reminds my of the yard at my Grandparent's house in Bel Gardens in the 60s. They had a Koi pond with actual Koi in it and a colonnade with hanging plants and climbing plants and plants in planters on either side.

The Watch Duty app showed every WCK station in the L.A. area. It's amazing how many people they fed. You normally only see that many in a war zone or after a hurricane. Hope you enjoy your trip!

Hey, Max! About your birth certificate:
You can go to the town/city hall where you were born and ask for a copy. It will need to be notarized but they are qualified to do that there. There may or may not be a small fee. You also can get a copy of a marriage license, death certificate or divorce certificate.
But I’m sure with all that research you do, this all would come to you once you stopped to think about it. ❤

I’m norwegian myself, and have never ever needed my birth certificate for anything - thats why I wonder :)
@@Ane_Rikke You use it as proof of citizenship for certain things, like applying for a US passport(you actually include your birth certificate in the packet when you apply for the first time) or to legally prove who you are for things like a driver's license, tax forms/eligibility to work in the USA at a new job or marriage license. I use mine when I go to renew my driver's license because for whatever reason, my DMV has issues accepted my old license as proof of who I am.

@ Any time! That seems so weird to me but I am assuming Norway has it's own ID system.
@ I guess it might me a more common thing to always have a valid passport here (and when I renew it, they accept the old passport as valid ID even if expired) Also my drivers licence is valid ID and up until five years ago they were valid until you 100th birthday, now they are only valid for 15 years before having to update - but that can be done digitally, and sent directly to my official home adress based on the prior expired one).
I just checked, and if I want a print out of my birth certificate I can do that logging in digitally with my national digital ID - and have it sent to my official home address.
Yes - different countries, different systems; that was why I was curious as to what you used them for.

Jose, your garden looks amazing! Max showed some of it when it was raining and it looked gorgeous. I'd love a garden tour. We love Tom Bihn for travel bags, suitcases, etc... I got my son one of their backpacks his sophomore year of college and he's still using it over a decade later. They are well made and durable, worth the expense, and a wonderful company. Immigrant cuisine! I’d like to see a series on immigrant foods that poor immigrants brought to America, that they ate in their home country or on the trip, that have become extinct in their home country. So, American Norwegians eat lutefisk, but it is no longer an ordinary food in Norway (it is stockfish soaked in lye that was a 19th century poverty food)- but where did it come from and why did they eat it? I think there are similar Irish American and German American food that were preserved by immigrants, but have died out in their home country. Pasties in the upper midwest would be another one. You could look at the history of the food, why people preserved the tradition in the new country, and why it is no longer appropriate in the country of origin. And you could cook the original dish before transport to the us.
Just an idea!

I had stayed at the Gallert hotel in Budapest. Even if you don't stay there, i suggest spending a relaxing afternoon enjoying the baths offered there indoor and outdoor. The history of the hotel itself is fascinating. Also, outside the hotel on the right hand side is an easy walking route that brings you to the top of a cliff with an amazing view of the city and the Danube river.
There is also a fountain right next to the hotel where you can taste all the thermal water, each tap is from a different thermal bath. Not sure it is in operation during February tho

As a doctor, the most common dietary advice I give is about increasing iron in the diet, and reducing cholesterol. For the history side of these topics you could maybe go back to the 1920s and talk about Popeye’s love of spinach. Unfortunately it’s not as iron-rich as the cartoon would have you believe, so for the very richest source of iron you could go even further back and discuss what we in the UK call black pudding (but here, you might lose some of the audience!) For cholesterol you could either cook the greasiest dish you can think of, or discuss dietary phytosterols which lower LDL cholesterol.

As a hotelier, might I sugest dishes and drinks created by or attributed to hotels?
The Waldorf Astoria alone created several dishes that are common and popular now.
Btw Jose, I know exactly what you went through with dress shoes in cold weather. As a kid we traveled alot, dad worked for United so we had flight benefits, and we would visit family in Alaska. But as the family of an employee we had to dress in full suits no matter where or when we went.
So alaska in the winter with flat sole dress shoes... Yeah, my brother and I spent alot of time trying to get across the airport parking lot sliding on our backsides. And since my mom never bought us shoes suitable for snow, because we lived in the Bay area and snow was a once in a decade thing, once a year my brother and I turned in to the both the youngest and best dressed latino bob sledders in perhaps all of the northern hemisphere.
Samsonite makes good ultra light suitcases for travel and I usually just stick stickers on them for identification so you can probably buy large vinyl pokemon stickers and slap them on.
You can put your lego creations in acrylic boxes and display them on a shelf. I think that would be nice. Some people make specific boxes with lighting and everything for certain legos.
Also, if you live in an area where disasters happen its good practice to have all important documents in a folder or plastic bag in a drawer ready to go. birth certs, medical records, passports etc.
I go to Marshall’s… good suitcases at inexpensive prices.

You can make your own Pokemon suitcase if you can't find one! I'm a huge FFXIV fan, and my sister decorated my new suitcase with the Red Mage class symbol (since it's my favorite class). (She has the art talent in the family, hence her doing it rather than me.) ❤

I cannot imagine what it must have been like trying to decide what you would and would not take with you had you been forced to flee knowing that, if things had gotten to the point of the fire reaching your place, anything you did not take with you might not be there when you returned. Jose, if you've never experienced the David Austin rose "Abraham Darby," check it out. One year ours put out 60 blooms at one time! And it's not really that big a bush! The smell is lovely and fruity. It's one of my favorites out of the huge number of roses we've grown through our several decades at this house. I really enjoy seeing your plants, so more garden videos, please!
Sadly, I believe that one is discontinued. I've kept an eye out for thatone and Lady Emma Hamilton, also discontinued. I can't be too upset though, I have 90 varieties planted (with some duplicates) and more coming in. My favorite smell is the Old Rose scent, but I do like fruity ones. Myrrh and tea fragrance have been an adjustment hehe

A fun food story from there, we stopped at a restaurant for lunch and when we got our plates we picked up knives and forks but the server said “nein ahhh…. ‘Finger-food’” and smiled, so we happily switched to eating with our hands!
Well my friend picked up a big pile of what he THOUGHT was shredded cheese and tossed the whole thing in his mouth…. only to realize it was raw horseradish meant as a pallet cleanser, and spent the next few minutes coughing it up🤣🤣
Perhaps for a themed month, you could look at what the sanatoriums/psych wards of the 1800s/1900s offered for food for patients. I know some of the larger ones acted more like prisons and ended up being abandoned in the late 1970s-80s. Each sanatorium varied from state to state and even from country to country. Glad you guys are safe and sound, keep up the great work!
I don’t know about a theme, but the episodes I’ve really enjoyed were ones that showed what recipes and dishes looked like before another cultures ingredient or cooking technique were introduced. So like pizza before tomatos or Japanese noodles from before they opened their borders. Something along those lines :)
That Valentine's Day video is DEFINITELY on my to-watch list!! How awesome!! Good to see you’re both well. How about this idea for a theme… A few years ago I found an early 20th century cookbook which was included when you bought your wood cook stove. I’ve tried some of the recipes with hits and misses, and did it on my regular gas stove. That was fun, but made me think about recipes which came with kitchen equipment. I haven’t seen this done before, but maybe I missed it. All the best to you two!

I’m a grandma and I was thinking about how I want to share my family recipes with my 9 year old granddaughter. Perhaps you could do a series on family recipes and ask your viewers to submit a family recipe for you to do. Admittedly, many family recipes are simply recipes we made for years but were sourced from magazines, old cookbooks and/or “stolen” from friends. 😉
Another subject count be pressure cookers and how they affect recipes. I’d be interested in how pressure cookers were invented and how instant pots are related.
That is a really nice back yard. It reminds my of the yard at my Grandparent's house in Bel Gardens in the 60s. They had a Koi pond with actual Koi in it and a colonnade with hanging plants and climbing plants and plants in planters on either side.
We're in the hottest part of the valley, wish summer wasn't so awful for the garden cus I really do love growing flowers.
