I’m a visual learner too. Didn’t realize it till 17 years ago I became a custom cake decorator. I always tell people send me pictures so I can see their vision. Now I understand why I struggled in school. Some people can learn by reading and can imagine it or see it in their mind, I need to see it. I can’t get pictures in my head like most people can and it’s so frustrating!
This is why i love homeschooling. Instead of making my kiddos adapt to 35 other kids, they are able to flourish and develop their own style in learning. It really does change a kids self esteem when they dont have to struggle.

I've been stressing about starting my own because I really want to be able to make this bread at home and know exactly what is going in it, but I've procrastinated because I am scared to fail at the starter!! I only bake sourdough during the winter, so I just started a new one last Tuesday. I mill my own flour so use a hard white wheat to get it going and for feeding. Hope this works well for you and everyone that tries them!
When I began Hepzebah 2.0 a few months ago I was determined not to be so uptight about it and that has worked! The only thing I've been specific about was not using chlorinated city water and using purchased spring water. Whether she gets all purpose flour, bread flour...an equal amount as water or less she hasn't fussed and just been bubbling away happily. I am trying to get her used once a week and she's been nothing but pleasant this time, woohoo! It is great that you are trying a purchased starter to help folks who are struggling, you are a rockstar!
I brought an heirloom starter after unsuccessfully trying from scratch for weeks. It was dehydrated but wasn’t too difficult to get going, very quick in fact. I didn’t keep it tbh, I started a new one and kept them side by side, I think it helped my starter to get established. My own starter is now over a year old and strong, I no longer have the heirloom one, I didn’t like how it smelt to be honest. Mine has a mild aroma which I prefer. I use unbleached bread flour with the occasional feed of rye flour. I haven’t shared mine yet as no one I know is interested. I live in the U.K. It will work in the end for sure and you’ll be happy to have your lovely bubbly starter.
In Alaska, we have old guys that live in dry cabins. They are called "old sourdoughs." I'm pretty sure it's because most of them have really old sourdough starter they keep on a shelf next to their wood stove. They never refrigerate their starter. I don't know how they feed it or keep it alive, but most of them have an ancient starter.
I made my own starter 2 years ago. I use it as a flavoring agent when I make rye bread. I found a great bread machine sourdough cookbook online and I like it very much.
So much easier than trying a dehydrated starter. My problem isn’t starting one it’s keeping it alive when I’m too busy to use it to make breads. There are a group of ladies out west that dehydrate an 177 year old starter from the Oregon trail mail it to anyone for free, just send a self addressed and stamped envelope, they were slammed with requests the first of the year with thousands of requests so I won’t say who but that one sounds interesting, when I try it I’ll let you know. But this is so much easier looking forward to watching you do this.

My grandfather was a master Baker from Germany we made everything from scratch. Now that am vegan I have to very careful what I eat. My diet is because of Agent Orange.

Giving me Amish friendship bread vibes. 😉😊 I’ve never made sourdough before. I’m still trying to master a loaf of plain white yeast bread. Ugh… I can do buns, rolls, cinnamon rolls, but a simple loaf of bread…nah! 😫😂 One of these days I’ll attempt sourdough though.
it has extra gluten in it, i have never heard of using it.....i would try to get the AP flour, you have time to snag it before your starter gets there! And they sell it on amazon!

I have on hand Kirkland Signature Organic Unbleached All Purpose; don't you think this would act the same? We're talking $20 for 20lb as opposed to $15 for 2lb. This is so awesome Heather. Great video of the starter. Now do you put your starter in an area where it is warm in the kitchen so that it can start bubbling? My kitchen is a bit on the cool side since now it has gotten cold out. Again Heather thank you for a great video. Your awesome ❤
There are lots of ways you can use the discard so you never actually have to throw it out. Pancakes are probably my favorite to make with discard. I've also made tortillas, pasta, coffee cake and even puppy treats. 😊 Lots of recipes out there to try.
This is probably an odd question, but here goes. When you placed your starter on the scale to begin fermenting I thought will it weigh more after it ferments & before adding anything else. Hope that mashes sense.

I couldn't get my first starter started. After a month, it wasn't doing anything. I tossed it & started over when we returned from a trip. During that time, I discovered something. The pH of my water was too high (alkaline). I read something about using juice. I had orange on hand & used that instead of water. My starter took off immediately. To anyone experiencing problems, try using juice or distilled water and see if it makes a difference.
as simple as I can explain it, it is fermented flour, with a ton of healthy bacteria and it makes it easiier and healthier to digest. It doesnt spike your glucose, so its great for diabetics, and heirloom quality is just that, super healthy and nutritional. It just takes a little bit..... it is the opposite of gross. hahaha great question though!
Sorry, I should have chosen a better word than gross. I didn't mean that offensively. What I meant by that is, is it sanitary to use 100-year-old starter? Are we trusting all those hands are washed? Just curious on your thoughts.

HAHAHAHAHA This definitely is a trust thing....I read their bio, and they do have almost a 5 star rating....I pinned a comment from a subbie who bought hers 2 years ago and its still going strong....so we are definitely throwing all of our trust in the pot and praying my gut is right. hahaha
Do not put an all metal top/cap on starter because it won’t rise. Use a cap/top that is coated or plastic underside - coffee filter is very good secure with rubber band.
Actually, you are supposed to be using wooden spoons to stir. Metal shouldn't be used as it does something to the sourdough. Learned that from someone who worked at the Parisian bread when I lived in San Francisco ages ago. Parisian bread is the one that they sold on Fisherman's wharf for many many years.

if placing it in the fridge doesn't work for you, you can freeze it. that will slow your starter way down!

Right now it's under the lights on my counter, but if it's cold, I will stick it in my oven with the light on. It will keep the draft off of it.

King Arthur Baking has a great starter also. My beginner friends biggest problem is they do not let the starter ferment long enough.

For the discard starter, can't you use that in bread now instead of throwing it away?
