A word of warning about eSims - you generally need to have your phone PAID for in order for them to unlock it. We have like 6 newer iPhones on a payment plan with AT&T and they wouldn’t unlock them unless we paid them all off right then. We ended up just doing the international plan they offered (Italy)

eSIMs take a bit of a learning curve, but will likely continue to get better in the future. Watch some TH-cam videos and try it out on your next trip. Note that the linked list of providers is actually the carriers for each country, not eSIM providers (e.g., Airalo, Holafly, Ubigi, etc.). There are data-only eSIMs and regional ones that also have phone options as well.

Getting codes sent to my phone is not uncommon here in Rome. I use the AT&T travel plan and my regular phone for this reason. I do have to notify my local banks for my debit cards, but not my credit cards.
