Lucknowi Sheermal
Preparation time 15-20 minutes
Preheat 200°C
Baking time 180°C for 12-15 minutes
Serve 2-4
Ingredients
For Sheermal Dough
1 ½ cups Refined Flour, मैदा
1 ½ tbsp Powdered Sugar, पिसी चीनी
Salt to taste, नमक स्वादअनुसार
½ tsp Baking Powder, बेकिंग पाउडर
½ tsp Baking Soda, बेकिंग सोडा
½ tbsp Milk powder, मिल्क पाउडर
Prepared Starter, तैयार किया हुआ स्टार्टर
2 tsp Curd, दही
2 tbsp Milk, दूध
1½ tbsp Ghee, घी
1 tbsp Ghee (after kneading) घी
Saffron & Rose water (for glaze) केसर और गुलाब जल
1 ½ tbsp Ghee (for glaze, after first baking) घी
Saffron & Rose water (sprinkle after first baking) केसर और गुलाब जल
1 tbsp Ghee (for glaze) घी
For Starter
½ tbsp Yeast, यीस्ट
Warm Water, पानी
A pinch of Sugar, चीनी
1 tsp Milk, दूध
1 tsp Refined Flour, मैदा
For Walnut & Green chillies Chutney
½ cup Curd, दही
2 no. Garlic cloves, grated, लहसुन
⅓ cup Walnuts, chopped, अखरोट
few Mint leave, chopped, पुदीना पत्ता
2 no. Green Chillies (less spicy & chopped) हरी मिर्च
Salt to taste, नमक स्वादअनुसार
A pinch of Black peppercorns, crushed, काली मिर्च पाउडर / कुटी काली मिर्च
Process
For Sheermal Dough
In a parat, add refined flour, powdered sugar, salt to taste, baking powder, baking soda, milk powder and mix it well.
Add prepared starter, yogurt, milk, ghee and make a soft smooth dough.
Apply clarified butter and knead it well. Cover it with muslin cloth and rest for 30-35 minutes.
After proving, flatten the dough with a knock back method.
Divide the dough in equal parts and flatten it with the help of hands.
Make a cut on one edge and dock the sheermal with the help of fingers.
Apply saffron & rose water on it and rest it for 15-20 minutes.
Bake it at 180°C for 12-15 minutes. Apply ghee and bake it for 5 minutes or until golden in color.
To finish, apply ghee and transfer it to a serving dish.
Serve with walnut and green chillies chutney.
For Starter
In a bowl, add yeast, warm water, sugar, milk, refined flour and mix it well.
Keep it aside for 5-7 minutes or until frothy near a warm place.
For Walnut & Green chillies Chutney
In a bowl, add curd, garlic, walnuts, mint leaves, green chillies, salt to taste, black pepper and mix it well.
Transfer it to a serving bowl and keep it aside for further use.
