Ma'am is used to give respect to a woman in informal situations. So Ma'am is correct . In formal situations you can use Madam. But Mam means mother which is used commonly in Ireland, Wales, and parts of northern England.

Madam, IPA of zoology is ('zu'aladgi) in Oxford Dictionary.
Sour is used for " khatta" , please let me know if it's used for "karva" (bitter) too.. as you said sour is karva
