Good morning Suchi!! Muthiya you made were almost correct. We add wheat floor, jowar floor in addition to besan. Besan is of highest proportion, two fist size of jowar flour and 1 fist size wheat flour. This will provide better texture of the batter next time. Moreover, the batter you made had too much of water content. Its consistency is slightly more liquid than the wheat dough we make for roti. The formation of round balls should be easy. Next time you can make different variations too. Sometimes add methi and palak mix, or grated bottle guard and palak, or onion and methi, or grated cabbage and palak. All these taste equally good.

I agree it was little watery but was good attempt. making rolls and cut after cooking will be so easy and quick. even it is ok if u will not turn it. just close lid and keep for 15 min or so it will b cooked. this made me craving for muthiya. I will cook today

First aap gehu ka aata aur gram besan dono same quantity me lijiye fir usme oil, garlik, adarak, red chili powder, haldi, salt, lemon, sugar and rice ho to rice ya methi ya grinned dudhi bhi le skte ho.. Fir uska parathe jesa thoda hard aata gundna he aur phir as per you want, you can make any shape nd then steam it... After that usko tadka lagana hai..

Well this was god gujrati dish, but u should make deep fried muthiya (oval shape) and freeze them, then whenever u have less green veggies, like bhare huve potatoes, bringle, green papdi surati, mix lilva seeds frozen packs, guvar, u should add these frozen fried methi ke intense muthiya, it will help us to increase quantity, taste quality, and impress Anuj ji.

So good to see u tried gujarati dish. Muthiya is something v can make by so many ways and can add all veggies like grated carrot, infact I add grated beet too sometimes, palak , cabbage, lauki, v can use leftover dal, rice. I use wheat floor, suji, besan, bajri/ragi, oaats mix it and add any of above mentioned vegetable and can serve dry muthiya with tea, tomato sauce, chatni, buttermilk, anything. try handvo sometimes as u like to use veggies for kids u will like that too. bcoz in hadvo also v can use all vegies togather.

The steam ones are muthiya, and when u made curry it is also one of version of Dapka... Actually we make long rolls n steam cut and thn put tadka... The curry wala think is basically as I said Dapka

Hi di, that muthia is also you can make with lauki and in that kadi, you can add little bit sugar or jaggery for that taste is amazing. in muthia, I added a 1/4 cup of wheat laddu flour and put a little bit of cooking soda so your muthia comes softly. in muthia, you can also add green chill and ginger, garlic paste, sesame seeds.
For drumstick, make sure u buy extra and freez them with pumpkin big chunks, it will help u to make sambar anytime u want.

Actual Methi na muthiya has bit stiff batter, sweet and sour and deep fried until golden brown. Other steam Gujarati muthiyas are made up of fine or coarse wheat flour has stiff dough like parathas...with ajwain, methi or bitter gourd and chillies. But your seem good though 😊

Lovely recipes.. I never tried gravy type muthiya but tried a dry version for brkfast for snack.. I’m not a Gujarati but tried this frm one of my frnd.. u can try this variation just if u like
MUTHIYA - breakfast or snack
Ingridients :-
Atta - 2 cups
Besan - 2 tbsp
Oil - 3 tbsp
Lauki - 200 gms (grated and water squeezed)
Boiled Rice - 1 cup
Red chilli powder - 3-4 tsp
Haldi - 2 tsp
Dhaniya Powder - 3-4 tsp
Salt to taste
Ginger-Chilli paste - 2 tbsp
Garam masala powder - 1 tsp
Roasted jeera powder - 1 tsp
Kasuri methi - 3 tbsp (can add fresh methi leaves as well)
Baking soda - 2 pinch
Corriander leaves - ¼ cup finely chopped
Jeera - 2 tsp
Ajwain - 1tsp
Sesame seeds - 4 tsp
Ingridients :-
Red chilli powder - 1 tsp
Haldi - ½ tsp
Dhaniya powder - 1 tsp
Salt - to taste
Sugar - 1 tsp (optional)
Lemon juice - 2 tbsp
Ingridients for tempering
Oil - 2 tbsp
Curry leaves - 8-10
Heeng
Rai
Jeera
Sesame seeds
Method :
In a big bowl add all the ingridients and knead into a soft dough and let it rest for 10 minutes .
Now divide the dough into 5-7 equal balls and form cylindirical roll of each dough ball using oil .
Steam the muthiya rolls for 20-25 minutes .
Remove the muthiya rolls and let cool down and then cut roll into small slices .
Now sprinkle red chilli powder , haldi , dhaniya powder , salt , sugar and lemon juice and mix well so that it coats each and every muthiya slice .
In a kadhai heat 2 tbsp oil , add rai , jeera sesames seeds and let it splutter .
Add heeng , curry leaves and all the muthiya slices and mix well and cook for 2 - 3 minutes .
Garnish with chopped corriander leaves & sesame seeds . Serve hot muthiyas with tea , ketchup or any kind of chutney you like .

You tried to make Muthiya but it does not have batter it should be in form of dough, wheat flour is also essential. Like loose one but dough form definitely. Pani zyada dala he. Moyan bhi dhalna hota he. Lauki ke sath bhi banta he. After steam, we cut Muthiya in to small pieces and than tampered with rai, til, curry leaves and make it crispy.

Ingredients:
1 cup methi
1/2 cup grated lauki
1 cup gehu ka mota vala aanta
1 table spoon besan ka aata
1 table spoon garlic paste
1 tea spoon lal mirch Powder
1/2 tea spoon haldi powder
1 tea spoon dhanya powder
1/2 tea spoon garam masala powder
Salt as per taste
1 table spoon oil
Pinch ot baking soda
Recipe:
Sare ingredients ko 1 bowl me mix kar lo aur aata guth lo. Pani ki zarurat nahi hai kyunki lauki bhi pani chhodati hai isliye. Aur hatho se lambe muthiya banalo fil boil karne k liye chhalni me oil laga k boil kar lo. 15-20 minutes k bad churi se check karlo aata chipke nahi to samjo muthiya pak chuka hai.
Tadka:

Sesame seeds
Kari patta
Hing
1 table spoon oil
1 table spoon chini ko 1/2 cup pani me pigali hui
Oil garam kar k tadka lagao aur chini vala pani ka mixture add kar k 1 boil aane k bad sare muthiye ko chhote chhote pieces me cut kar k dal do ...

Have you tried propogating mint leaves from the mint you have? Will save you money and you will always have mint when you need it. I live in Vancouver and have no problem growing mint in this weather! Very helpful especially since you already have a lovey garden :)

Hi Suchi... awesome vlog... as always!! My kids used to hate eating saag/ palak puree...but they both love paneer.... so for the last few yrs I have started putting paneer cubes in my sarson ka saag just like palak paneer!!! I just make the puree saag/ gravy thick so it sticks to the paneer pieces more .... then as a compromise i let them just pick out the paneer pieces and eat it and leave the green stuff behind;) they feel that they got away with murder!! And that way i dont have to make back up for kids meals.... although now they have gotten used to eating it and dont mind eating the entire thing ... plus adding paneer just balances/enhances the nutritional value of the dish ... win win 😊😊
Make sure these methi muthiya has extra loaded adrak mirchi and garlic paste with garam masala without soda. If you add soda, all muthiya will burst post cooking in one pot meal.
Don't add yogurt curry in these sabji
