Hash Browns
Ingredients
1-2 Russet Potatoes
Salt and Pepper
Olive oil
Directions
• Peel and Grate potatoes
• Lay down paper towels and place potatoes and roll them up and squeeze out water. You need to do this process twice.
• Salt and pepper.
• Heat the griddle medium heat (low and slow). Spread olive oil over the griddle.
• Layout potatoes flat over the oil. Pound it out and push the edge in around all sides’
• Check every 5 mins until it is golden. It takes about 15 mins aside.
• Flip and repeat unit crispy.

We are from East Idaho where the best potatoes are grown and we do a lot of hash browns. Thing is, we just bake them the night before to get the liquid out. No paper towels needed. Works great.

@@MrNytrosdad You need to let them cool then you peel them and shred them. Used lots of butter. I mean a lot of butter and some salt and pepper. Let them get crunchy in spots. It will be more of a hash than patties.

Wahoo!! So glad! We know there are other ways to do it, but this is one that has been really successful for us.
The reason you need to use so many papers towels is because you cut the potatoes on a cheese grater. A grater is going to break apart the cells of the potato, causing it to leek water. If you use a Mandolin, you won't break open nearly as many potato cells. you can make very very fine matchsticks that are easier to work with and require absolutely no drying.
Thank you so much for the tip! We have found, however, that with potatoes that retain their water, the hash browns end up being very mushy - if we deep fried them, it is a different case, but for the hash browns, it is. Have you found that for a patty like this using the Mandolin slicer works? Take care Mohammed!
@@waltwins Thank you for the reply! From my understanding of the basic anatomy of a potato, the process of grating causes the potato cell to rupture, releasing water (like I said earlier) but in this process, something else happens. Pectin, which is the chemical compound that helps fruits and vegetables keep their shape, cross links with calcium ions, making the pectin stronger. This makes it very hard to break down the pectin and soften the potato, in the case of the types of hash browns you cook here, it's good because it keeps your hash browns from getting mushy. However for something like mashed potatoes, this would be very bad because no matter how long you boiled the potatoes, they would always be firm and never whip up into a smooth mash.
So to answer your question, when you slice the potatoes with a Mandolin (or a sharp knife) to make matchsticks, you rupture fewer potato cells, keeping the calium away from the pectin. In turn the potatoes soften more as they cook. This is a trade-off I am personally willing to make because I find the process of grating potatoes by hand and drying them off to be a pain in the neck. In turn you get something that has more the texture of a Rösti (swiss potato cake) than a traditional American hash brown.

I a veggie spiralizer, rise them and chop them up on the griddle, throw my mushrooms and onions little more than half way threw... it really fast to make alot of hashbrowns for alot of people

looks good, but you forgot the Tabasco and over easy eggs. I use a white cotton kitchen towel ring out the water, then roll it out with a rolling pin. pat of butter with olive oil for flavor.

OK my friends, I am convinced starch does not need to be removed. As promised I am giving my breakfast report on the Blackstone today. The bacon, scrabble, sausage went very well as usual. I learned a few things. The number two settings on the two left burners did not do it for the potatoes. Not in 50 degree weather. I think next time I will boost to 3 and leave the right two burners full. Also I think butter or oil is key to the browning of the potatoes. The hash brown cook stalled the food delivery for the troops today! LOL! The reports for the hash browns came back positive and I learned about my hot zones on my blackstone. The scrambled and over easy eggs were a breeze after the hash browns came off. We processed 8 potatoes and only used 3 of them so we put the rest in the freezer and we will try the cook again. Next time with more heat and more butter. Enjoyed your videos and would like a refresh on how you would prepare a big breakfast. I had my family 5 out of 6 plus my Dad and his wife. It was a crew to cook for! Take it easy guys! Love watching your videos.
Wow, thank you for the report!😄 Yes, we should take into account when offering heat advice, suggestions are related to where you are cooking - Florida will differ from up north - especially in the winter. 2 eggs
2 Tablespoons flour
1/2 small onion
1/4 teaspoon baking powder
1 teaspoon salt
3 cups cubed raw potato
Put eggs, onion, salt, flour, baking powder and 1/2 cup of potato cubes into Osterizer container
cover and process at grate until potatoes go through blades. Stop Osterizer and add remaining potatoes,
cover and process at chop only until all potato cubes have passed through processing blades. do not overblend!
Pour onto a hot well-greased griddle. Fry until golden brown. Drain on absorbent paper.
yield 12 pancakes Enjoy

If you have a potato ricer that is much easier and less messy for getting out the water. Plus you don't waste a bunch of paper towels.

Used a potato ricer this morning - worked great - less mess - rinsed them in the ricer before squeezing the water out. Thank you boys for a wonderful video.
Great video guys another one out of the park. Tip for straining clothes. Go to fabric store and buy muslin. It's cheap! Get a few yards. You can make muslin towels or bags. Use pinking shears or zig zag see a seam all the around. Note! Don't fold for seam. Trim the sides close to seam. Then wash cloth on cold to minimize shrinking. Hang to dry. No drier or it will shrink more.
Now you have better then cheese cloth. They can be rewashed until they no longer hold together😂

It's funny . I just watched Jenny Jones make her hash browns the other day . Everything you guys said is exactly what she said . She cooked hers on the stove in a none stick frying pan . 15 mins per side and it was ready . She stressed the fact about 15 mins . Then again you guys were using the griddle . Great video.

Yes, in fact, we have done these before inside, and we stressed the 15 minutes, before discussing (not filmed) they the griddle would cook quicker - we were anxious to see if the 15 minutes per side would stick! Being from Louisiana we always have some of the "Holy Trinity" around. That would be onion, celery and bell pepper. You can invite the "Pope" ( minced garlic) if you like too.
I use about 1 part "HT" to 2 parts potato. And top with some of my favorite cheeses. Can even add some sweet Roma tomato slices under the cheese if you feel froggy.

@@waltwins It can ALMOST replace some seasonings. Blanch the celery before cutting and then mjx with equal parts onion and bell pepper (My wife.likes to mix the colors on the bell pepper) and freeze in batches. Usually a cup or 2 for each batch. Then, just like corn, straight from the freezer to the heater.
You can just squeeze them with your hands, by doing small amounts at a time and its same effect without the waste of paper towels but its absolutely not a step to skip if you want crispy taters. Love you both!!

Towels? Wow. I never have to worry about water. Every week I instant pot 2 or 3 potatoes and use them over a couple days. Hash browns come out dry and cook fast. This is good to know if I have to make hash browns on short notice.

I love homemade hash browns. I found a new and easier trick the other day to make these on the Blackstone. I took one large potato and did not peal it. I put it in the microwave for 2-3 minutes (wrapped in a paper towel) Took it out and cut in half and let it cool.. Then grated it (peel and all). No need to dry the water off. It kind of sticks together to form the hash browns. And they don't turn that brown yucky color like I have had in the past. And then cook on the black stone.

My 2 cents or sense?? Big bowl on counter, strainer bowl inside big bowl, all the potatoes in the strainer, and a smaller bowl on top of potatoes, press a few times then dry with a few paper towels. Just a suggestion. Looks like grip of badass browns there fellas

Hey guys. This was a GRATE video! Just got back from our vacation to Branson, MO and catching up on videos. I did not know the keys were behind the camera. Great trick :) These hasbrowns looked good. They do take a while to make, but they did seem very good. I LOVE hasbrowns. On Saturdays, I like to make a big breakfast for everyone and one of the things with it is hashbrowns. You have to have hashbrowns with eggs right?? That crunch sounds good as well! Seems like everything is better on the Blackstone. Is that true :) Another wonderful production. Awesome video, thx! In terms of moisture removal, would it work to leave the shredded potatoes on a baking sheet in the fridge overnight? I do this same thing with rice before making fried rice and it seems to work well.
Thank you so much for watching! The only issue we have found with potatoes, is after a short amount t of time they begin to turn pinkish, and then brown. The rice works excellent as it can dry out without turning. Hope this helps!!🤙🤙

Word of the day #Shananagizing from the #Waltwins. You guys are awesome and make me #BLOL. I literally just made a rendition these with seasoned shredded potatoes. Used my new 6 Ring Orange Silicone #Blackstone Egg / Pancake Mold to make them. Shredded and dried my potatoes, added an egg, some seasoning and a little flour to make them hold together a little. Wanted to make 3 Hash Brown Patties so I made 6 balls of seasoned shredded hash browns (like you do with the beef for smash burgers), put it into the Mold and flattened it down … then I put a piece of old cheddar on it and topped with another ball shredded potatoes and pressed it all together. Creates a great pocket of cheese in the middle of the potato cake. #Yummers. They are one of my many forms of potato breakfast patties.

10:00 - The color on your griddle is beautiful!
Thank you so much! We recently sanded dow the surface with a wire wheel, and re-seasoned with flaxseed oil. That coupled with the many cooks with vegetable oil is giving it a really pretty amber/gold color in the corners.🤗🤗

Looks amazing. You could make that into a kind of nacho base... melt some Canadian cheddar or colby onto it, drop on some griddled loose meat cooked on the side, onion and veg, sprinkle a little scallion, and top with salsa, sour cream and guac. Nacho hash brown!
and maybe season a touch with cumin and paprika

To pull out moisture, You can Salt them prior to the roll up.
Canning salt is the purest. No "flow agents' like silicone dioxide. Store salt in a glass jar.

Btw: "Vegetable" oil is garbage.
Butter, Ghee, Coconut, Olive, Beef or Bison Tallow. (Or try a combo)
Tallow WAS what made McDonald's Fries awesome. Up until the mid 90s

Do you happen to have an idea of the surface temp of your griddle when you cooked these? I have been using an IR thermometer but would love a reference on temp. Thanks for the video, great tips and now I have to go make hashbrowns lol.
Thank you so much for watching! With the dial turned to med/low, we get almost 400 degrees in the middle. We use this as the starting place for most cooks so we can control it. If it feels like it’s not getting hot/cooking soon enough, we’ll turn it up. Very rarely have we overcooked starting at the med/low setting. Hope this helps!!🔥🔥

I like my hash browns a little thicker (1/4"). I do rinse in a strainer, then into a salad spinner then onto paper towels twice. I leave them rolled up in the damp paper towels and pop them into the microwave for 3 minutes while the griddle is heatinng up. I get crispy outsides with tender and cooked insides. The salad spinner part is a little iffy,, but it's fun and I think cuts down on the amount of paper towels(?) Grilling time is reduced also. Maybe you would call these potato pancakes?.....but they look like hash browns :)

We’ve been recommended the salad spinner but have yet to give it a try - we love doing hash browns but the prep is a bit time consuming - your way cuts down on that for sure! Love the idea of hearing them in the microwave too - that would do a great job of getting them hot first, then just get the delicious crispy crust!! Love this! Thank you for watching and sharing!🔥🔥🤙🤙

If you would coat the potatoes with corn starch after you dry them they will brown and crisp up nicely.

What temperature would you use if you use the blackstone electric griddle?
Hi David! Thank you so much for watching… cooking them on medium high heat is key… so on the E griddle, I’d say around 375-400. Be patient, and let the bottom cook for a good 10-15 minutes. The surface will lose temp when you put the good on it, so keep that in mind…😁
