Was already thinking that it's kind of similar to a ramen fried rice I make then they brought out the kimchi and it's now exactly what I make. I have cottage cheese on the side to mellow out the heat from the kimchi and red pepper seasoned rice/noodle combo.
As for the ramen with egg, I poach and egg or two rather than scrambling.
