材料Ingredients
皮的材料 Wrapper
一百四十克澄粉 140g wheat starch
一百八十克生粉 180g potato starch
六十克粟粉 60g corn starch
三百六十毫升清水 360ml water
十毫升菜油 10ml vegetable oil
四分一茶匙鹽 1/4tsp salt
餡料 Filling:
四十克浸腍的蝦米粒 40g rehydrated dried shrimps, diced
兩隻冬菇,切幼粒 2 shiitake mushrooms, diced
五十克菜脯粒 50g pickled radish, diced
一百八十克梅頭豬肉碎 180g pork, minced
二十克肥豬肉碎 20g pork fat, diced
二百五十克沙葛粒 250g jicama, diced
兩個紅蔥頭,切碎 2 shallots, sliced
五十克潮州花生 50g fried peanuts
一百克韭菜粒 100g chives, chopped
八十克芹菜粒 80g celery, chopped
三棵芫茜切幼粒 3 cilantro, chopped
一百二十毫升浸了冬菇的水 120ml water
醃豬肉 Pork Marinade:
兩茶匙生抽 2tsp soy sauce
半茶匙糖 1/2tsp sugar
半茶匙生粉 1/2tsp potato starch
少許麻油 sesame oil
少許胡椒粉 ground pepper
調味料 Condiments:
一湯匙蠔油 1tbsp oyster sauce
兩茶匙生抽 2tsp soy sauce
兩茶匙砂糖 2tsp sugar
半茶匙胡椒粉 1/2tsp ground pepper
半茶匙五香粉 1/2tsp five spice powder
一茶匙麻油 1tsp sesame oil
一湯匙生粉加一湯匙半清水 1tbsp potato starch in 1.5tbsp water
兩茶匙紹興酒 2tsp Shaoxing wine

My family is chiuchow (or Teochew people) and this is my favorite dim sum dumpling. I'm definitely going to give this recipe a try over the Christmas holiday!! Excellent video with explanations and step by step instructions.

餡料太多了,以前很久我小時候,我家舖頭中午時有潮卅伯叫,水晶包,皮很薄,看到里面的饀料有芋頭粒,有廣式臘味,有香菇,有粉葛粒,有花生粒,放在熱氣蒸籠裏,賣時取出放在小碟里,灑上煎蒜滴上一點芝麻油,再灑上浙醋,非常非常好吃是正宗潮卅小食,現在己失傳了手藝很美,皮薄到透明又不破,真功夫。

張媽媽,你好,我做粉果,滾水可能煲太耐唔夠搓粉,應該加凍水落去, 繼續搓嗎? 心急人等緊謝謝
你好👋將滾水沖入粉中,是要讓粉沖熟後,粉皮會軟熟易包餡,而留起的粉最後加入,目的是讓先前被滾水燙熟的粉,降低些熱度,可以用手來搓,滾水如果太少或不夠,加入冷水的話,可能粉團會不夠軟熟,包餡時會較難黏合,所以依足我的方法去做,會操控得好些哩!如果不夠滾水用,用煲仔再煲些少加入,先前未完成的,惟有用蓋子蓋著等,不要讓蒸氣和熱度散失,下次再做,水最好煲多些,然後用量杯來量滾水,然後才沖入粉裡,便萬無一失啦!謝謝支持😊👍❤️

Do you have recipe for chives dumplings served at dim sum? It is steamed then lightly fried.
360ml水有点太多 建议大家先加280ml再做adjustment

張媽媽點解我將360毫升熱水放入澄丐,生粉到攪拌,發覺好水、全部都係水唔成團,最後再加入70 g 澄面 90 g生粉,先至成團,不過最後包餡料嘅時候,皮裂開同埋蒸完之後唔透明。係唔係寫錯水的份量。
你好👋這個食譜的粉和水的比例是正確的!祇是要用的水是滾水沖入粉裡(這時可以看見當滾水接觸到的粉,因為被沖熟,而呈現透明狀),不是熱水便可以將粉沖熟的,因為粉未被沖熟的話,是不會成糰,就算成了糰(因為粉未熟),粉皮不夠軟熟,很難包得埋和裂開的,最好再看清楚影片介紹和做法,了解和明白後才動工,做起來便會暢順多!謝謝支持👍😊❤️
@@mamacheung 我都是慢慢地一邊把熱水沖入澄丐、生粉,一邊用木棒攪拌,初初都好像你的。不過加到一半熱水已經好水!
@@chengjanet5746 水要即滾即沖,否則降了溫度,沖不成糰,如果成糰了,多了的滾水便不用再沖入,(沖入滾水都係要看當時的情況而定),照你所描述應該是水不夠滾和太多喇!😊
