How to Make Chinese TEA EGGS in a Rice Cooker!

  • Chinese tea eggs or dragon eggs is one of my favorite foods and it goes great with rice, as an appetizer of in a sandwich. Here's how to make them using a rice cooker :-)

    Tea eggs recipe
    Ingredients:
    6 Eggs, boiled
    Marinate:
    6 cups water
    2 tsp sugar
    2 tsp salt, depends on your taste
    2 tsp cumin powder
    2 star anise
    5 clove garlic
    1 cinnamon stick
    1 tbsp chili pepper
    1 cup soy sauce
    1 tea bag Oolong
    2 tea bag black/red tea

    Hi Mike, Love your channel. I made the tea eggs yesterday and had them with my family this morning. Followed the recipe exactly. I thought they came out a bit too salty for my taste, still delicious from all the ingredients together. I plan on making another dozen next week, except I'm going to omit the 2 teaspoons of salt and lower the cup of soy sauce to a 1/2 cup. All the other ingredients will be the same according to the recipe. I think that should work for me. Thanks for the recipe. The other spices really added great flavor.

    I've been making boil egg salad for lunch last week.... I think this week, I'll make tea eggs.... I certainly have the tea to do it >.< I just need cinnimon sticks and more garlic. I'll be eatting this on Tursday :-)

    I wonder how different these would taste from English pickled eggs?? I love pickled eggs!! Will have to try this for sure!

      In case you've not tried them yet tea eggs are nothing like pickled eggs. Tea eggs are infinitely better!

    I love tea eggs, but I have never made them myself. I do t ever remember the tea eggs I have had before being so over cooked that the yolk has turned dark green. Is it possible to boil and crack the egg and then marinate it a day or two by just pouring the boiling tea over it and allowing it to cool before refrigerating in order to keep it from overcooking but still get all the flavor?

    Can this be done without the sugar? And will it still be as good? Diabetic and need to cut sugar out of my diet.

    The yolks can be very flavourful if you braise the eggs in a slow-cooker for about 5 days. I usually use oolong or 铁观音 with star anise, dark soy sauce, cinnamon and salt. I like that you added garlic to the braising liquid. Shall try that one day.

      You can make it spicy I add another tablespoon of chili flakes into the broth

      If I remember correctly, the only thing is for all of the eggs to be submerged in the marinade. So that amount of ingredients should work for a dozen eggs. It looked like he had plenty of room.

      Thank you. I'm going to try this tomorrow! I might omit the star anise though. I picked some up and it smells like black licorice and I'm not into that flavour at all.

    You don't need to let the eggs sit in hot water for 10 minutes in the beginning, less time is fine because it looks way overlooked.
    The green ring around the yolk of a hard cooked egg is often related to boiling the eggs too hard for too long.
