It feels reminiscent of the aloe and jelly drinks in Japan, and I assume other Asian countries. (There are probably experts who know better but I think it is a texture thing.) I think you could be on to something that it is a product meant to mimic boba/tapioca pearl drinks but in a way that would be cheaper and easier to produce for a European market.
