- Here I test the stregnth of homebrew wine to see how turbo yeast, bakers yeast and raisins can get can get my homebrew. I use a hydrometer to calculate OG and FG to get ABV.
Because of your previous video entitled " How To Make Alcohol With No Equipment " I promptly went out
and spent $15 on fruit punch , orange juice , some apple juice, sugar and bread yeast It is very cold here where I am in
The Colonies so I made an insulated box and l try to keep the booze warm with hot water bottles . It is day 5 today , smells wonderful and things are bubbling away merrily . Thanks very kindly and I'm following your progress closely

Has the juice got preservatives in as can stop the fermenting process

fermentation . Oddly enough the cheaper cheap brands didn't have harmful preservatives like
premium brands . So far so good , I think apple juice may win for speed if bubbling and separation is an indicator tomorrow 9;30 pm will be 7 days at 75F-80Fand it may be ready . I've heard keeping it warm speeds it up but lowers
alcohol yield a bit not so much that it really matters . l will go two weeks .

I've learnt something new today, I've tried all sorts of yeasts but never chopped up Raisins, now that's a note I've got to keep in my Home Brewing book, Cheers for that ;-)
Takes a few days longer, but if you got no yeast 😁✌️
Raisins act as a yeast nutrient so if you cannot get the regular stuff, raisins are cheap & easily available.

I decided to go crazy and bought myself my favourite fruit drink, Mango Nectar, and followed your steps and the thing is bubbling like a mad man.
I think I might end up with a very nice tasting and strong drink, can't wait till it's done.

About 14% would be about right for yeast.
You can get some yeasts that will do 18%, usually known as "Champaign yeasts".
These are typically used in brewing mead.

My first bottle of cheap ALDI orange juice (If it is that) has been going for 8 day's now and has nearly completely stopped fermenting. Do you need to filter the drink, say through a coffee filter, or just decant it into another container minus the dead yeast. I also hope it's safe to actually drink this stuff after just sitting around in the heat we get here in Australia at the moment lol It's smelling nice though 😋😋 .........Also subscribed
If you can coffee filter, do it👍. You'll keep a few more sips as well 😉. But it is also fine to carefully pour off. If it didn't turn to alcohol it wouldn't smell pleasant. Also there will still be yeast in it as they are tiny and will go thru a coffee filter. Put the decanted stuff in fridge and decant again following day. Either way, let us know how it tastes 😁✌️

I used to make my own beer and country wines, i mainly used the fruits i picked locally, but did buy fruits that were over ripe as they broke down faster, I also added sugar to boiling water and stirred until desolved, let it cool before adding it, that way the fermentation started much earlier, however the longer you leave it the stronger the alcohol content as the yeast will only convert so much of the sugar, so you end up with a tart, medium or sweet wine but that WILL depend on the type of yeast and it's max conversion capability.

I woke up to a lovely surprise... an excellent video. Love the experimental aspect. I have a suggestion, when doing the plastic bottle fermentation, also do a glass jar one as well. There is a difference between the fermentation jars and the yield of higher concentrated percentage... this was fabulous!!!
So, I’m fairly new here, and enjoy watching.
Few pointers that can effect readings : 1) use your gloves when touching the hydrometer because the oils adhere to the glass resulting in misreads of specific gravity etc... 2) when cleaning out tubes, don’t use tap, you can rinse out with tap and then lastly final rinse well with distilled H2O so particulates and/or residue aren’t left behind resulting in misreads and/or cross contamination.
Something fun to try out once you have a finished favorite drink, in a masons jar, add in cherries or other fruits like grapes that will absorb the liquid (about few weeks to 2 months of absorption time, it’s a trial/error experiment but worth it) and becomes a fun albeit delicious treat filled drink 🍡🍇🍒 also can freeze fruit afterwards and becomes a dizzying ice cube too.
This is one reason I stay sober... I love the drink, science of mixology etc... in my younger age I came up with some tasty drinks that go down so smooth but had a kick to it 😆🥴🤪👍👍 unfortunately I only have one kidney and liver is bad from chemotherapeutic meds... eh... life... just gatta laugh love and have fun...

I was pleasantly surprised that the raisins fermented so well, with only the naturally occurring yeasts. I frequently add them to some of my country wines to add body. Although I've made beer for 20 years, both from kits and all grains, I've got heavily into making wine only over the past 2 years, as I love foraging. I also love baking bread.
I wouldn't use a bread yeast to make a beer, (only ale yeasts). I would, hypothetically, use a bread yeast for distilling, as any "bread" taste would be stripped in the distillation process. Although I've never used it to make a wine, I do know that it can potentially be quite alcohol tolerant, 13% and possibly more, so I would use it in a pinch. However, I just get a big container of all purpose wine yeast, and use that for almost everything.
Like a knowledgeable distiller mentioned in a previous comment - turbo yeast is for distilling washes, and is generally not well regarded. It appears to be a gimmick to get people to buy tons of chemicals to make up for the nasty taste.
I've made a bunch of brews (wine) over the winter, as it has been so wet and nasty, and everything is fermenting well at around 18 C. I aim for an OG of 1.090 to go to 0.990 -1.000 (12- 13% ABV). Just as long as I get 2 stable readings over a couple of weeks apart, I'm happy. Patience is easier now that I have 14 gallon jugs on the go!

Started my tart cherry yesterday. This AM, I saw plenty of bubbles, this afternoon, I hardly saw any. I plan to see what happens on day 5 and see if I need to add more sugar/yeast. The same fermentation process you see with raisins also helps create sourdough starter. You start with flour and water, in a few days it starts to ferment. After a period, you split the starter and add more flour to 1 part to feed it. The other part is used to create sourdough bread.

@@RossTurner-Films You can calculate the desired percentage from the first measurement, that will tell you how much sugar you need to add to reach what percent. Mind you yeast usually don't live over 20%.

Other ways to get wild yeast is from outdoor leaves, soak them in water and sugar.
I just heard a story on npr where wasp poo makes a especially goo honey flavored yeast.
So it seems yeast has a big effect on taste.

One thing to consider is the yeast needs more than sugar. It will convert the sugar to alcohol but it will also die of malnutrition after a while because it needs more than sugar. Raisins, in addition to having starter yeast, are also a nutrient. In the very, very old days raisins would be put in the fermentation barrel and even when bottled a raisin or two would be put in bottles to continue fermentation (the yeast was already in the liquid, the raisins would feed it). Even in more recent times people sometimes use raisins to feed the yeast for moonshine wash. So perhaps try raisins in the other brews too. Otherwise the yeast might not survive until all the sugar is fermented. The % alcohol is the level at which the yeast will die, what level of alcohol is toxic to it basically. But it can die of malnutrition (or other causes I guess) before it gets there. You're basically trying to keep the yeast alive long enough to eat enough sugar to die of alcohol poisoning.
Interesting, they do not have any sweetness from taste but I guess there could be sugar left undetectable by the tongue. I will put some raisins as food in a bottle, see how that goes 😁👍

All from asda, 5kilo sugar 6 quid, Allison's yeast £1.50. I need to experiment with more sugar to see if they go higher. I'd say get it to 30 degrees, I've put yeast in 40 deg liquid and it's gone mad, if kept at that temp may be even better, saying that not sure about flavour profile ✌️

@@RossTurner-Films Lidl's 1kg for 1.09, frequently at 15% off - much cheaper, and for so many recipes it's 1kg per gal, less faff!
the yeast will only ferment the amount of sugar that that particular type of yeast can handle.
He had that experiment with 1/2 a cup of sugar, and it ended around 13% for all of them. That is getting up there. Personally I would try 5/8ths, 2/3s of a cup. There is no way 1 cup will work as that would mean 26% approx. based on his maths. And that won't happen. As the alcohol is produced, it slows and kills the yeast, and it can only go so far. So if you add way too much sugar, it will have the same alcohol content as a lesser amount, and it will be too sweet as the sugar has not all been fermented. Your suggested 18 to 20 degrees fine.

Raisins have wild yeast that grows on the grapes. It’s the same yeast as sourdough bread.
You can also use canbbage leaves. They have the same wild yeast ..it’s the white layer that you find near the bottom of the cabbage near the stem.

I’ve tried most of the fancy yeasts, turbo, champagne, etc. by far the bee taste came from the bread yeast. I’m glad I’m not imagining things.
I’ve used raisins as nutes, but never as the primary yeast, I need to try that.

Cheers Ross, well done mate! Can’t deny the numbers! The yeast will make a difference tho. The yeast is the probably most influential part of the recipe. In beer making you can make two batches exactly the same but with different yeast and they turn out like two different beers with different flavour profiles. Lovin the channel owd lad, keep it up.
Give the lalvin K1-V1116 a go. I think you’ll be happy with the results. I think it can go up to 18% without dying.
I’ve used this yeast with my homemade cider using shop bought apple juice. ..currently got a 6us gallon bucket going. Gives a nice flavour with no off flavours.

@ fantastic great to hear. Also…please please mate get some sanitizer. I use star San it’s dead easy to use and honestly it’s insurance against bacteria infection. Once you make up a batch 6ml makes 3.75litres (just plain water) it saves for ages and the concentrate will last years. It’s not much but will guard against loss of time money and effort and disappointment . Can’t stress it enough. Put it in a squirty spray bottle and have it on hand always.

Spray it on and leave it on a bit then you can shake it off but don’t ever rinse. ..at least that’s how I use my star San. I also spray about 10 squirts in my bottles, put the lid on and shake it to cover all the inside surface of the bottle.then let it settle. With my beer bottles (grolsch type) I just let them sit like this till I need to bottle. Star San foams so leaving it for quite a while helps…it’s settles just like water then pour out. You won’t need to do this as you ferment in the bottle itself but a few sprays on the screw and inside the lid would be good. The sanitizer is basically phosphoric acid (same acid in coke) but stronger. The majority of the spray when made up is water ie 6ml star San : 3750ml water..I’ll email you some info mate. If you can’t get star San ask your brew shop mate for a sanitizer with phosphoric acid .

Nice! Well when I did my turbo, I took the math of what they said it makes, and factored that down to a smaller amount of 2L and I only used water and sugar with it, rather than juice. I weighed everything out and I did not add any flavours or have any way to measure the strength. Look at the instructions on the turbo yeast and do the math to make a smaller amount. Then see what you get.

Based on your dynamic presentation, I have 2 bottles on the go… 1.5ltr Don Simon Pineapple & Coconut. Both just £1 each… Bread Yeast… One is 13 days and the other is 6 days today… Come Monday, when end duty and no driving, I’m gonna launch them into decanting and hopefully get sozzled… we are both legends if it works, but leg ends if it doesn’t!

20 Litres is 28.57 700ml bottles
5 cups to a kilo = 30 cups (you used half a cup, but consider the orange juice would have half a cup added already ;) )
My only thought was, some yeasts like slightly warmer temp around 22c you started them at 12c, this is low, starting them off more at room temp
next time might help push a slightly better result, but i wouldnt add any more sugar personally; also add an airlock to let pressure escape or they may explode too

hmmm, can you make wine out of/with tangerine or orange peels? would that add some interesting flavor to the whine? what about banana peels? the thing is that these peels may be covered with chemicals in order to preserve the shelf life of these fruits, but removing a very thin layer of these peels would, probably remove those nasty chemicals without removing completely the flavor they may give. are these ideas worth pursuing? would orange juice and orange peels wine taste better than simple orange juice wine?

careful of the 'pith' and some of the oils in the skins of citrus can retard the fermentation, if there is enough oil in the skins.

I do mine with cut up pineapple and ginger in one of those cheap 20ltr tubs with a lid. 1kg of sugar and 2 packets of yeast. Stick it then in a lidl coke bottle. I.get about 12ltr a week from it for £3. Dont eat the fruit after as the yeast strips it right out. The ginger gives it a nice warm spice taste. But if if you get yeast be prepared to spend the next day with the weirdest hangover ever butt.

If you read up on Turbo Yeast you will find it has a bunch of sweeteners and additives in it, the raisins one is slightly higher probably due to the added sugar content from the raisins, also the gravity reading was slightly different.

Turbo yeast comes with yeast nutrient to feed the yeast for a healthy fermentation.
Often when fermenting if the yeast slows or stops for no apparent reason, a tiny, trace amount of yeast nutrients is required. And it will start off again in a second or two.
With that yeast it is in the packet, so this problem doesn't happen. I guess you could call it additives.... but they are not bad ones.

I used a cooler to ferment I put the bottles inside with a heating pad the one time I used raisins I had a blowout got juice all over.

I think your experiment is great, but having worked with distillers yeast and turbo yeast in my own experiments, I think you should try this again, but with higher sugar contents for all of the yeasts to see where the upper limit is... For... science :D

The turbo yeast was eother stressed or under fed. It produces off flavours such a fennel and liquorice. Leave it in the fridge for another week to mellow. Or gulp it if u enjoyed the taste

The amount of alcohol is limited by the sugar 1.090 g /liter will give about 12%
Turbo yeast contains yeast nutrients Di Ammonium Phosphate , minerals, and vitamins that what you can taste it is meant for distilling that leaves the nutrients behind
With turbo try 300 grams of sugar per liter of pure water (better boil it to get the chlorine out) that brew will go to about 18% (big batches may get so hot it kills the yeast and produces foul tasting wine)
The taste is personal choice wine and champagne yeasts will go to about 15% and produce good tasting wine brewers yeast is ok to

Absolutely, Thankyou for taking the time to inform me. So the "liquorice" flavour is the feed for the yeast? So turbo is meant to just make a sugar wash to produce high alcohol to be distilled? To be used for other things. When you say big batches get hot, do you mean to say fermentation is an exothermic reaction, so much that it will raise the temp of batch? So am I correct in saying wine yeast will go higher in percentage with better taste rather than turbo which is just purely for efficient ethanol production regardless of taste? @@RossTurner-Films Turbo yeast is a product under active development, the holy grail is to have a yeast that ferments clean to 20% ABV, put the ferment through activated carbon to make clean tasting neutral alcohol, that flavors can be added to to make inexpensive ready to drink stuff in can cheap ( big profit margin ) .
Most of the crap tasting and toxic stuff happens late in a ferment. Many distillers reduce the amount of sugar added to turbo brews to improve the quality of the resulting distillate.
@@RossTurner-Films Heat build up from fementation heat is only a problem with big batches ( 20 liters plus and in very hot climates ) keep making 1 liter batches and you will have no issues
your hydrometer will also have a % scale giving an indication of what ABV you can expect when that wash /musk is fully fermented .

Apparently adding Rasins along with yeast can help the yeast to feed if the sugar runs out. Hopefully it'll add a nice flavour to it as well.
@g-4722m I thought it would add flavour too but didn't think it did. Let us know about yours. The raisins, so I'm told adds nutrients to feed the yeast getting a more efficient "reaction". Have fun man 😁👍

Not warm enough maybe given the temperature outside. Bit warmer probably will be higher. You should definitely seive out the yeast as well when pouring it into a bottle. Try good quality sultana's instead of raisins in a box.
Fair, I did look for the organic stuff but asda don't stick it lol. It's an interest, will the yeast not ferment all the sugar at lower temps or will it just take longer. Fugging beer police be at my door soon 😅
Try it with the sultana's and good yeast and demerera sugar, it is higher quality, less processed sugar which is better food for the yeast, it needs to be kept warm as constant as possible, not hot, but so the liquid is warm, it will be a lot colder than the room in this weather.
Another way you can do it is to boil a little bit of water to boil off any impurities and dissolve the sugar into it, let it cool down a bit then add the dissolved sugared water into the juice instead of just adding the hard sugar crystals, should ferment faster and stronger.
You can also get a one way airlock to put in the top to let gases out but lets nothing in.

do you really need a licence to freeze distill? Plenty of small batch brewers do it and they aren't making spirits at the same time (my logic is if they had to get a license anyway they'd probably be making at least a gin)
Turbo yeast usually have a weird taste. Its why moonshine made with it needs so much carbon filtering to clean

all distilled alcohol benefits from charcoal/carbon filtering. The nutrient in the turbo yeast don't go thru the still. But off flavours will go thru. I used to run it thru a filter twice. Any more filtering and you honestly lost all the taste. Triple filtered plain spirits or vodka was virtually untastable.
But your breathe reeked of alcohol to anyone else. I liked to filter once or twice, so some of that hot taste reminded you that you were drinking something potent.
I am living in an area where we can make as much spirits or whatever as we like. But no permitted to sell it, and severe penalties if you do. (Can share it, have a party, or home consumption for the family.... that's all)
Gave it a go with bread yeast, tasted like cider, no real orange taste or sweetness but drinkable, got a pineapple brew on the go 😉

Tried my pineapple brew today, very nice indeed , rather an exceptional brew ( wife didn’t agree ) and had the desired affect, nice and chilled but no idea of specifics gravity ???, much better than the orange, maybe I’ll add a little sugar after brewing next time, got another brew on the go 😃, top channel , hope it grows 😉🍺🍷
