For those not fully caught up to the most recent Anime episode, spoilers: This scene is a conquerors Haki moment for Zoro, he didn't infuse haki into his blade but he used conquerors to make Monet fear being cut by him, there is a similar moment in Wano when Zoro "cuts" a bunch of con men in Wano, only they go unconscious after being overwhelmed. This is one of Oda's hints until he reveals Zoro's conquerors against Kaidou, after he gives Kaido a permanent scar, like Oden.
Actually zoro DID use conqueror in its blade. Using conqueror, but not armament haki, you can disable a user fruit powers, like for instance when Law changed back into a man.
It's hilarious to think that Zoro at this point was at a level JUST below King and Queen because he didn't have a real challenging matchup until Wano lol Everyone he faced was getting sweeped. To specify, Hody (maybe even with all the drugs at the end) Monet, Fujitora doesn't count as a real fight (admiral so I'd say Zoro prob would have lost), Pica, Hawkins, Killer was sorta a challenge but Zoro was also handicapped with multiple opponents and still won. Finally when he met King the gap was scary at first and was an immense challenge to overcome but my lost boy found his way to victory.
