Hotel Concierge could definitely work. I used TABLEALL to reserve a spot specifically at Hiro Sato's counter since they typically have pre-purchased seats at the main counter with Chef Sato. You could also book a spot at a sous chef counter which would be easier to achieve.
You never seem to include wide shots of the restaurants that you feature. I understand that this is a food review channel, but from a design standpoint these restaurants are works of art in and of themselves. Missed opportunity

There is no price list or tag if you go high end Sushi bar in Japan. They can really rip you off pretty bad, especially 1st time customer. It's really better not to go such restaurant. I can see the stupid pride in this chef's face. He needs more training in his mentality.

What is the rice? The color is diferent!!
It's from the akazu vinegar used to season the rice! It gives the rice a dark red color.
I am always curious as I have never tried Omaksase before. Does the meal fills you up or you still feel hungry afterwards?
Depends on the meal but usually with~20 pc of sushi + appetizers you will be pretty stuffed.
