Ingredients of Roasted Leg (Raan) with Pulao
For stock:

âĒMutton pieces with bone 1kg
âĒOnion 1 medium
âĒGinger 1tbsp
âĒGarlic 6 cloves
âĒCumin seed 1tsp
âĒCoriander seed 1tbsp
âĒClove 1/2 tsp
âĒBlack pepper 1/2 tsp
âĒBlack cardamom 2 pieces
âĒCinnamon stick 2 big pieces
âĒStar anise 3 pieces
âĒTez paat (bay leaf) 4 pieces
âĒSalt 2 tsp heaped to taste
âĒWater 3 liter
Marination for leg (Raan):
âĒYoghurt 2 to 3 tbsp
âĒCumin powder 1tsp
âĒBlack pepper powder 1/4 tsp
âĒGaram masala powder 1/2 tsp
âĒCoriander powder 1tsp
âĒSalt 1tsp
âĒLemon juice 1tbsp
âĒBrown onions 2 tbsp
âĒTurmeric powder 1/4 tsp
âĒStock 4tbsp
âĒOil 2 tbsp for marination
Rice preparation:
âĒSoaked basmati rice 1&1/2 kg (6cups)
âĒOil 3/4 cup
âĒSliced onions 2 medium
âĒGarlic chopped 1tsp
âĒGinger chopped 1tbsp
âĒMix whole gram masala 1tbsp
âĒChopped tomatoes 1big
âĒCoriander powder 1tbsp
âĒCumin seed 1tsp
âĒBlack cumin seed 1tspu
