People might be freaked out by the outdoor kitchen countertops... meanwhile the go into the kirchen and cut stuff up on butcher boards all the time. Plastic is hard to clean... you rub salt into a butcher board to clean it. Stainless ruins the blade on a knife and you have to sharpen often. Right now, you did the best you could with what you have. I am pretty sure your great great grandchildren will know about you and all you built.
As a good point to share is my prior generations First Nation's Nez Perce survived and thrived for thousands of years this way without illnesses off the land and never was any of the wildlife indangered as they used common sense taking great care in management of their resources with no waste! I fully agree that you need to show people that this is how you have to do these things as it’s been done before people have to realize meat doesn’t grow in the garden.
It's a darn shame that media (and people) these days prefers to ignore the reality of how food is produced, and a person like you has to address less than a hospital-type sterilized environment. I believe the meat you processed today is healthier than anything bought in a store. The small bacteria you "might" pick up will be killed in any good cooking process. In addition, you have thought out your processing and preserving well. I have processed meat in much less sterile locations (as ALL of our ancestors) and I am alive and well today at 70. Yeah, if anything it's the factory farmed supermarket meat and even _some vegetables_ that have a tendency to get contaminated with stuff like E-coli, salmonella etc. There's an alarming amount of cross contamination on factory farms too, when things like lettuce or cabbages are grown way too close to cattle farms. There are serious cases of E-coli every year in the U.S. and even deaths. In nature though, the only thing I'd be worried about is rabies-infected meat.
Cooler ideas, and one I built for early deer season. I built an insulated room, 6’X6’ installed a 10k btu air conditioner paired with a coolbot system, and it runs on very little electricity and works flawlessly! I can turn it down to freezing or below, but only set it to 38-40 degrees Fahrenheit.I’ve had it for 7 years now, and haven’t had to do anything to it!!

Hopefully with _some_ modern conveniences ... like fuel powered vehicles, tools, and even a few electrics to go along with wood burners and walk in freezers. I was a young archer with the "Redwood Bowmen" in Oakland Calif, target shooter, was pretty good too but I had a problem shooting game. I was also a sharp shooter in the Marine Corps, just a couple of points off of being an expert but again I could not kill anything. I understand the need to survive in the wild and nobody does it better than Shawn, champion builder to boot, hat's off for the adventure and keep us going. I'm 84 in a wheelchair and I really enjoy the adventure that he is going through, I've been here from the start watching from the first build he started to where he is today. My affliction came to pass in 2018 but the video's gave me hope and I felt I was with him in the wild with his beautiful sidekick dog. Thank you for all of that.
Exactly how my grandparents used to put up meat. Wrap with freezer paper, tape and pencil to mark what it was. We got 1/2 a hog and 1/2 a steer. All butchered then we packaged and froze it. Also stuffed out own sausage and sometimes ground our own beef. We have an old wood table from my wife's family that they used to butcher all their hogs on. It has many cuts on it. They never died from any diseases. We now have it as a dinner table. It now has a glass top because it has so many grooves in it. But it's beautiful and has many memories.
Terry if you have watched Shawn for a long time now !!! You saw him build the other cabin cross the stream there then !!! I am thinking that would be a Grand place to hang the meat & cut it up for the time being !!! What do you think??? I always had a wooden cutting boards more or less doors that were older for to not be used for doors any longer !!! Shawn also has the plant form cross the ways from that shed so he could make that into another refrigerator or freezer !!! It is where they do the maple syrup also !!!

The way you do it, my grandmother and mother also processed and preserved the meat. Some were also smoked, sometimes pickled in salt or air-dried. To make beef jerky all you need is a tripod and a tarp! I would recommend a burnt metal spindle for smoking. If you're interested, I'll be happy to explain to you how to do something like that! Shawn, Don't worry about the conditions you process your food in! That is your business! I water bath my tomatoes in my garage. Along with the items I have to pressure cook, like pumpkin, soups and meats. As long as you process it properly in the pressure cooker you will be fine! Think about how they did did it 100 years ago. Keep the vids coming!

Love these videos. Can I give you a tip on the grilled cheese? Toast both sides of the bread. Toast the first side of each piece, then flip it to the inside and put the cheese on the hot toasted side making the sandwich. Then just cook it as you would the grilled cheese sandwich toasting one side, flipping the sandwich and toasting the other side. This helps with the cheese melting and makes a super crisp sandwich.

Tbh, I stopped asking questions after you replied to me once about your workshop after you had told us and showed us your new cabin property a few years back. I’d noticed that the flora didn’t match up around the huger culture garden/root cellar/workshop with the new property. Even after your reply to original question, a few other things then caused me to question my sanity. No chicken coop after you said you were building one… etc. Figured you were protecting something real important to you and decided whatever it was was certainly none of my business. Reminds me of my childhood with uncles and cousins that did all that taking game from the land and processing it or even my dad and one uncle who raised beef and pigs and the butchered them and processed them and canned everything from the meats to vegetables and fruit back in the 60's & 70's. Your just sharing your life style and how you get what eat right off the land. Well except the moose like you said. Thank you for bringing back so many wonderful memories of my own.

Yes indeed. Mum and dad would mince half and tenderize the other half and those would cook in butter, onions, fresh cream and crushed garlic served with mashed spuds and fried bread rolls. They would also use this same method when cooking fresh water eels as well and sometimes add curry powder.@@ellbow7287
Watching your videos many years, and it’s very interesting. I live in US, but was living in Ukraine, and spent many years to do wood carving. I love to use hand tools, chisels, axes, and wood ideas. I built small cabin in my back yard, but would like to make bigger cabin too. In Ukraine was big forest next to my house,that goes to Latvia , really big, with big huge oak trees, birch, and ash , hornbeam, maple... different types of wood. I loved just walk for hours to get plenty of berries, many varieties of delicious mushrooms, and of course really fresh air. And next to forest 3 huge lakes , fishing, ducks, dears, huge elks, wild pigs, I was young and didn’t hind, but was fishing a lot, it was really good place to spend time. Thank you so much for great videos and your skills to hunt , cook, nan of course BUILD and work with wood. All of this Gods created land, forest, fresh air, and our life. I’m researching oldest book Bible, and it says about wood, old style tools, unique style of life. I wish you success in your super interesting style and your family Shawn an waiting new films ... but thank you so much!

If you grind your deer tallow , hog lard ,or beef tallow first before rendering you’ll increase your yield by a lot! And faster
Agreed, I normally do that but I was a little overwhelmed with the work and let it render on its own. I think I have a couple of old videos showing rendering pork fat that way

I'm a retired boner, butcher, meat cutter 30 some years. I realize you don't have equipment that Pros have access to but I believe you do a Great job for what you have. Shawn, Don't worry about the conditions you process your food in! That is your business! I water bath my tomatoes in my garage. Along with the items I have to pressure cook, like pumpkin, soups and meats. As long as you process it properly in the pressure cooker you will be fine! Think about how they did did it 100 years ago. Keep the vids coming!
Every time I hear that "100 years ago" part, all I can think of is that "we" died much younger then. 🤪

Love these videos. Can I give you a tip on the grilled cheese? Toast both sides of the bread. Toast the first side of each piece, then flip it to the inside and put the cheese on the hot toasted side making the sandwich. Then just cook it as you would the grilled cheese sandwich toasting one side, flipping the sandwich and toasting the other side. This helps with the cheese melting and makes a super crisp sandwich.

Tbh, I stopped asking questions after you replied to me once about your workshop after you had told us and showed us your new cabin property a few years back.
I’d noticed that the flora didn’t match up around the huger culture garden/root cellar/workshop with the new property. Even after your reply to original question, a few other things then caused me to question my sanity. No chicken coop after you said you were building one… etc.
Figured you were protecting something real important to you and decided whatever it was was certainly none of my business.

I like watching you process your game food like that. Reminds me of my childhood with uncles and cousins that did all that taking game from the land and processing it or even my dad and one uncle who raised beef and pigs and the butchered them and processed them and canned everything from the meats to vegetables and fruit back in the 60's & 70's.
Your just sharing your life style and how you get what eat right off the land. Well except the moose like you said.

Yes indeed. Mum and dad would mince half and tenderize the other half and those would cook in butter, onions, fresh cream and crushed garlic served with mashed spuds and fried bread rolls. They would also use this same method when cooking fresh water eels as well and sometimes add curry powder.@@ellbow7287

Watching your videos many years, and it’s very interesting. I live in US, but was living in Ukraine, and spent many years to do wood carving. I love to use hand tools, chisels, axes, and wood ideas. I built small cabin in my back yard, but would like to make bigger cabin too. In Ukraine was big forest next to my house,that goes to Latvia , really big, with big huge oak trees, birch, and ash , hornbeam, maple... different types of wood. I loved just walk for hours to get plenty of berries, many varieties of delicious mushrooms, and of course really fresh air. And next to forest 3 huge lakes , fishing, ducks, dears, huge elks, wild pigs, I was young and didn’t hind, but was fishing a lot, it was really good place to spend time. Thank you so much for great videos and your skills to hunt , cook, nan of course BUILD and work with wood. All of this Gods created land, forest, fresh air, and our life. I’m researching oldest book Bible, and it says about wood, old style tools, unique style of life. I wish you success in your super interesting style and your family Shawn an waiting new films ... but thank you so much!
