    A couple of years ago, I saw a Leg of Ham, that was Australian meat, with an imported Canadian bone.
    I laughed it off, as being a "Misprint".
    Now, I understand.

    The problem isn't the meat glue. It's the fact that the companies aren't labeling their products as "meat glued" meat. The issue is that people are overpaying for their meat and can potentially get sick if they don't cook it well enough.

    Instead of glueing the rest of the meat back together, just make some freaking ground beef. Especially if you're too lazy to label it. No one wants to get sick from making what should be a whole chunk of meat.

      You don’t have to be greedy to use this product. It’s an AMAZING option/solution for home cooks. Just because something CAN be misused doesn’t mean that it’s SOLE purpose/use is to deceive. I’m using it this week to marry four chuck roasts into two “prime ribs” for Thanksgiving for my family. I’ll totally be open with my family with what I did and they get to enjoy 10lbs. of roast that tastes BETTER than prime rib for $50 instead of $200!! Save money AND produce a better dinner?? If that’s so “evil”, then count me in!! Judge all you want!! #dontcare!! 😜

    Im just guessing here, but I think most butchers use the glue to put the pieces of meat together that has had the fatty chunks cut out. I'm not sure that it's just "Scraps." I think the fact that they charge more, saying it's a prime cut, is the worst part of this

      "Well marbled" is meat industry propaganda. The marbling comes when you feed the poor cattle corn instead of grass. Grass-fed beef isn't marbled like GMO corn-fed beef is. Cattle have multiple chambers in their stomachs so they can digest grass not corn. That's why they give the corn-fed cattle anti-biotics because the cattle get sick on the corn. Yeah, and they feed skim milk to pigs to make them fat so that skim milk is healthy for you thing is also BS.

      @@Inkdraft Grass fed beef tastes like fish because the omega 3 oils outbalance the omega 6 oils. We invented grain finishing beef thousands of years ago based on learning that cows that were slaughtered in fall when the grass was in seed, tasted better than cows slaughtered in spring. Feeding cows a little grain a few weeks before slaughter, makes the meat taste better. Well marbled meat tastes better. Nobody feeds the cows grain their whole lives, they eat grass until the last few weeks where they are finished on grain. Grass fed beef is a scam created by liars and frauds, who want to sell unfinished beef, and old cows fit only for dog food, for a premium price.

      Butchers in the past used bits and pieces left after cutting steaks and roasts pkg it as stew meat, which had a variety from all parts of the cow. It was good, some fatty pieces, some tougher cut pieces, even stew meat today is not like it used to be!

    saw another video with someone evaluating tenderloin pre-packaged cuts that were close to $20 a pound. They were wrapped with bacon like that, too. I'm assuming that attaching the bacon is a good way to hide any that didn't glue completely and comes apart before or during cooking.

    I'm not much of a meat eater but I think this is finally enough to push me over to vegetarianism. You're possibly eating left over parts from a dozen cows shaped like one steak or chicken filled with porcine or bovine wastes. It's like nothing is safe to eat anymore. If practices as these are approved by USDA and FDA, it makes you wonder about their credibility.

      As a vegetarian or vegan where do you get the vitamins, minerals or collegian from if not meat? You remove meat, you must be replacing what you get from meat with something, and it is also man made, why not eat the real thing as opposed to manmade replications of the real thing?

    theres nothing wrong with meat glue I'm in the restaurant industry and we use it to do new and creative things with meats but selling it as a prime cut is seriously fucked up

      That's the point: The dishonesty of selling glued together meat chunks as a high priced cut of meat. That's why they don't sell it as the cheaper cuts of stew beef or ground beef. There's more money in lying to people. What goes around comes around so they say. Sure enough more and more people are buying from local farmers. I do. I know not everyone can but there are so many programs like CSAs that even people in urban areas can hook up with.

    If I had the option, I'd actually want to eat the steak with the yellow fat. It's not yellow cause of age, it's because that cow ate grass for most of it's life.
    Never seen yellow fat on chicken or duck till I raised my own free-range.

    I'm not sure if there will be any replies to this due to the age of the video, but I'd like to start a civilized conversation about this. I'd like to begin by expressing my feelings and opinions regarding the issues brought up in this video.
    First of all, it seems fairly clear to me that the editors and reporters had an agenda, which was to demonize the practice of meat gluing. As evidence, I present the ominous music played over the footage of glue application. That said, it did seem like they presented a lot of the facts as well, so I will mostly just focus on them.
    The product itself is dangerous when inhaled. That seems a given as our lungs are made of meat. It also seems clear that it's not dangerous once mixed with water, as is the case with application to meat.
    They make it pretty clear what the glue is made of, which is plasma from the blood of cattle and pigs. Here is the first actual issue I came to. I'm neither Jewish nor Muslim, so it wouldn't impact me personally, but to those people this is an absolutely disgusting practice and I personally find it abhorrent that a devout Muslim could buy some beef and, without being told, could be tricked into committing a sin, something that would be on par with cannibalism to the rest of us. Fuck that.
    Moving on, let's stick with danger and health.
    It seems that the only remaining issue is the introduction bacterial contamination. It wasn't mentioned in the video, so I doubt that there has ever been a reported case of infected glue itself, it therefore seems evident that glued meat is as safe as surface preparation dictates. As safe as hamburger, anything stuffed (if you put stuffing in a raw bird, you live way more dangerously than I do, and work on Chinook Helicopters in Papua New Guinea) or anything tied up with butcher's twine.
    What most people seem truly up in arms about is low quality meat being dressed up as prime. Honestly, what's the problem with this? If you can't tell the difference, why are people upset by it? You pay the price for the flavor and texture of prime beef and you get it, why are you upset? If anything, I applaud the people who were able to turn garbage meat into prime cuts. That's all cooking is. Dried corn was probably just ground and eaten as paste until someone realized you could pop it as popcorn. Chewing on wheat sucks, but grind it, mix it with water, introduce a leavening ingredient and bake it, you get bread. My opinion is that like so many other things involving the food we eat, this has been blown way out of proportion, but I'm not a nutritionist, I'm a mechanic. Please share your opinion, and let's keep it clean. Thank you.

    @atlasshrugged2u it doesn't happen to all fruits & veggies, but if u shop at the mega grocers like Krogers, Albertsons, Wal-Mart, Safeway, I'd generally assume those companies don't give a rats ass about their customers. Hopefully u have a Whole Foods or some other local organic store near u :)

    The only thing that's bad about this is that even if the "glue" isn't actually glue, the meat you're eating could be badly cooked, and as a result, you'd get sick.

    Get some friends or family together and buy a whole cow for butcher. A lot of people are doing it nowadays in the U.S. Split the meat up and make sure you have a freezer large enough for your share. :)

      Ampix0 OK so the "glue" is harmless but the "bacteria" being pushed INSIDE the meat when it was OUTSIDE the meat is the danger. Hence why if you don't cook it well-done it wont kill the bacteria INSIDE the meat (unglued meats wont have bacteria inside!) which can lead to the consumer falling sick - depending on what they are eating (eg Chicken) may even be so sick they die (not all people can handle sickness like others). Hence why the EU has banned it as they know people can possibly die - so they obviously care about their citizens.

    Just to clarify, "Meat Glue" is just an enzyme. It is not safe to breath due the danger of closing your lungs off, but when cooking the meat it slowly deactivates the enzyme.

      Meat glue isn’t “scary”. It’s science. While I 100% oppose using meat glue to glue pieces of meat together to sell as PRIME cuts of meat (deceptive), meat glue is a super clever solution if you are simply up front about using it and and pricing accordingly. I am using meat glue for Thanksgiving to glue two chuck roasts together to make cheater “prime rib”!! (Taking four chucks and gluing them in pairs to make two separate “prime ribs”) for my family. They will taste even BETTER than legit prime rib after I sous vide them for 48 hours!! 🤤🤤🤤 AND I only had to spend $50 instead of $200 to make enough “prime rib” for a large group!! Don’t let the media scare you like this. Just LISTEN to the scary music they included in this video!! 😂😂😂😂😂

    @MickWiser That is true...and that's why we shouldn't be getting "food" from the store. We can find a local at a farmers market who raises their meat, if we so choose to eat meat. Or trade with a local neighbor who hunts...? There are many options, but as long as we keep doing things the same way, we will keep getting the same results. I hope people wake up and stop paying for their poison.

    it is extremely unfortunate that so many view regulatory agencies with such disdain: it is only in the safety already provided by the FDA and other agencies that these are said. Watching the video, the only negative outcome mentioned is 'food poisoning' which is a very non-specific outcome. The EU regulations are cited poorly, and out of context; and the assertion that there are more bacteria on 'glued meet' is not validated. Finally, note the careful use of language: that everything stated is non-specific and non-committal in nature so as to avoid libel. In other words, what we observe here is the use of scare tactics to boost viewership of this program.

    I am a meat cutter and this is not OK. We do not use anything like this where I work. All our scrapes are made into burger or thrown out.

    i don't see the problem...we use enzymes to tenderize meat all the time, and our bodies use them to break down food. why is this an issue? would you prefer they toss the bits too small to sell?

      all enzymes can be damaging to wet tissue. pineapple for example can irritate your tongue due to its bromelain. but not only do they wash off the meat glue (because prolonged exposure to high grade enzymes would leave the cuts unrecognizable), but even leftover traces would be cooked off. it saves money, is safe, tastes the same, looks the same... there's literally no downside to this

      True but I think the main issue is the that the industry is mislabeling, lying and overcharging what is essentially scrap into prime cuts. That is the problem, the meat glue is not new it often used for cooking and molecular gastronomy and is mentioned and labeled as such.

      the problem come with the bacteria and that meat glued reformed steaks need to be fully cooked for safety .. get a sous vide machine .. make your own reformed steaks marinate and season as much cheap cuts a you can.. then glue them together .. and you got expensive tasting steak any time you want ..

    This is in Australia 🇦🇺 not in America 🇺🇸 just to let people know!!! Today tonight is a show that aired in Australia 🇦🇺. America has USDA certified. So they do not allow that meat glue except in spam meat in a can.

    Might this be the reason COSTCO meat is “blade tenderized” and instructs is to cook thoroughly to internal temp if 145? Then they won’t be responsible if we get sick. Gross.

    This “news” is absolutely sensationalism. It’s not the full story. Yeah it’s a headline grabber backed by scary music (really?) But it’s... BS.
    Why?
    Transglutaminase (TG) is a naturally occurring enzyme in plants, animals, and bacteria. Enzymes are proteins that act as catalysts in chemical reactions; they speed up reactions and make reactions occur that otherwise wouldn’t. Although TG is a newcomer to the kitchen, cooks have used enzymes for thousands of years. Enzymes in papaya, for instance, are traditionally used as meat tenderizers. The enzyme rennet is used to curdle milk when making cheese. Enzymes that break down starches into sugar are used to brew beer. Naturally occurring enzymes in meat tenderize dry-aged steaks and give cured meats their distinctive flavors. Enzymes are the reason fresh pineapples hurt your mouth. They also keep gelatin from setting.
    As for “getting sick” from not thoroughly cooking meat put together by TG... well... duh.
    That’s why GROUND beef which comes from thousands of cows (potentially in 1 burger) can statistically increase your odds of e-coli.
    Naturally, if you’re bonding a few different sources of meat together, you are approaching ground beef. But really? Hardly. I have never heard of a single case where using TG had caused such cross contamination. And really... just make sure you always cook ALL meat properly and you will be just fine. In fact, odds are higher for cross contamination when buying pre-cut ready to consume fruit from your local convenience store.
    Is it unethical for butchers to use TG to pass off fake products? Absolutely.
    But let us be rational about TG itself and not who is using it.
    It’s bad enough that for too many decades MSG was another false boogeyman.
    Please do not drag us into another culinary blight.
    So remember folks: DONT inhale TG because it will bind the proteins in your lungs. But please do enjoy the wonderful creations in the hands of capable chefs.

    Many of you seem to be missing the point. The #1 issue here is the amount of harmful bacteria in this meat. Of course It's safe if the meat is cooked thoroughly, but we all know that most people like their steaks medium to medium rare. Issue #2 is overpricing. They are charging consumers for the price of a fancy steak when the "steak" is actually cheap meat scraps glued together. They're ripping us off!

    I am not buying Canadian meat like I used too. Getting half a steak with scraps glued to it or a t bone that tastes watery, bland and tough. Obviously there is something wrong with it. I took some time and found a small shop that only sells rib steaks or good t bones. I don't get a nasty disgusting surprise when I try to eat my steak anymore. Don't you people wonder why your meat is tasteless?? Compare it to a real grass feed and you will wonder what the heck you have been eating. And the pork farmers raising their prices AND cutting the size of the package? I am really heading towards veggies for good. Animal farming itself is a sickening thought. Regarding the price, is the gov't raising the price so high to get people not to buy it? How and why could a single serving steak cost 16-18. Might as well go to a steakhouse.

    Meat glue not just over paying it’s a true health hazard.
    The whole reason you cook ground meat well done, and not serve medium or rare is because it has cut surface throughout which is open for bacteria area!
    I’m surprised due to health concerns they can get away with this…

    Meat glue is safe for consumption and is used by top restaurants to play with the shape and texture of meats. The masks and gloves are really unecessary. The only thing i would oppose to is glued pieces of meat being marketed as proper cuts (eg. sirloin, fillet, ribeye etc.).

    Correction. We are similar to horses as our intestinal track length is long (like a horse) when compared to true carnivores like mountain lions. Our incisors are not long like a carnivores. Our jaw articulates and grinds like a herbivore. Male humans have seminal vesicles. Only herbivores have seminal vesicles. We suck water and don't lap it like carnivorse do.     Like I said before if you think you really have canine teeth? Jump on the back of a cow and bite through it's hide. We are much more like vegetarians than carnivores. If you were the same size as a horse, your intestines would still be 10x longer. Watch : Food that kills. How many vegetarians do you know? How many have diseases? How many are on p(harm)iceuticals? I've also said the meat we eat has to be grass fed, that's not what's in the supermarkets today. Enjoy the meat glue.

    Uh ... Hate to bust the bubble... But transglutaminase can & is used in restaurants to glue ANY protein. When you get that cute 5" tall round piece of trout with the citrus & fennel garnish ... Ask yourself -- "Now when did I ever see thick cylindrical
    shaped trout in the wild?". Now of the two types? I would suggest the bacteria as opposed to the blood based product . But again it's the lesser of 2 evils. The real questions? -- Why are we constantly processing our foods? Why isn'

    He he. "High end steakhouse"... He he. I used to work in one. It takes an IQ of about 80 to cook a steak. Where I worked they soaked the steaks in tenderizer overnight. The kitchen was filthy. The cooks at my favorite vegetarian restaurant are geniuses at making vegetable meals incredibly tasty, way more talented than a idiot broiling steaks. The cooks there are dedicated to an idea: health and kindness. The kitchen has a window to the outside. Spotless.

    So you're saying the bad thing about this is....1) Misrepresentation of product and 2) possible food poisoning to people who prefer their steaks anything less than well done. Then why don't they just label the product as a "Processed steak," slap on a warning label that it must be cooked thoroughly and sell it at a discounted price? Otherwise, scraps would be sent to processed food facilities. I would much rather have a nice grilled glued chicken breast than a McDonald's chicken nugget anyways.

    It's all about the money.... Food apparently is not what it once was and If we, as customers, don't bother to think and find out what it is we actually eat, the food industry will continue finding cheap, economic (and unhealthy) ways to sell their products. You definately is what you eat. Personally I think people have to decide for themselves what they want to eat, but today I am very happy I decided to become a veggie 20 years ago. Meat industry is not a neat industry...
