What We Do With Fresh Milk From the Dairy & Freezing Milk in Glass

  • Can you freeze raw milk... in glass? We do! Every month we get 10 gallons of milk from our local dairy. I skim the cream off to make butter, ice cream, chocolate mousse or whipped cream- whatever need arises that month. I save one gallon for yogurt and then I freeze the rest of the milk in quart size mason jars, so we have good quality milk that lasts us a month.

    I am very thankful for your channel. I have never heard women celebrate being a homemaker. I am a woman that is older and accepted the precious Gift of Grace later on. By the Grace of God we were blessed with a child. I felt the absolute need to stay home with my child and be a homemaker but, it definitely is not celebrated. The Church we have attended didn't encourage women to aspire to be homemakers and stay home to educate their children.
    I am blessed that a woman in our church homeschooled all of her children and had so many resources and guidance.

    Very helpful video! I request my raw Jersey milk in plastic gallon jugs because if its a busy season I can just shake it up and put it in the deep freezer. If it’s a slower time I pour it into gallon jars and let it sit 48 hours and then skim the cream for heavy cream. (I do not rinse the jugs, just toss into freezer to use after I skim the cream) I do not like the taste of my homemade butter so not doing that anymore. I tried everything, its not good and I gave up, haha. I get about a pint of cream from every gallon, that’s a lot! After I skim the cream I pour the skimmed milk back into the gallon jug and freeze it. To thaw I sit it at room temp on a towel for about 18 hours. Shake and enjoy. Zero issues doing this. Been doing it for a year now. I’m in East Tennessee, was paying $8 per gallon if I buy 5 gallon or more, she is just now raising prices to $10 per gallon. Still worth it!! Gonna try your mousse recipe, I’ve not had mousse since the Bonanza Restaurant days of my childhood. Love your content Kelli, keep it coming.

    If it comes from Jersey or a breed of cow other than a Holstein, there is WAY more cream in that milk than what you can skim off the top. For years now, I skimmed the cream off the top to make butter. Then recently, we bought a cream separator, and I was amazed at how much cream is in that milk! I hadn't played around with freezing milk because I milk a cow everyday, have for years now.

    We buy milk from our neighbor. It's so nice to have it so close. My beef cow gave birth yesterday & she was looking very full so I just went and milled a quart off her . I was so excited

    I guess we have been super blessed. Our local raw-milk-licensed farmer charges $5 a gallon. It was $4 until last year. But now we are in a bind..authorities have said that his milk "may have" tested positive for Listeria (even tho he has a super clean farm) and he is not allowed to bottle for raw milk distribution right now. I find the wording, "may have" to be problematic (did it test positive or did it not?), as in NY state it is almost impossible to sell 'raw milk'. Lots of hoops to jump through & very few dairy co-ops left that will let you do so. There is concern that this is a made up or hyped up charge to force him to pasteurize, as that has happened to another local farmer. Who knows? So make sure you keep in contact with your farmer & know what his testing results are (ag. websites listing recalls by county is a good way to keep tabs on it) We have fewer & fewer small family farms in NY. What we are left with are labeled as 'family farms', but they are mega-farms, milking up to 700+ cows a day. I am NOT interested in supporting that. They often use illegal aliens as workers, and the cows never see the light of day. The farmer we get out milk from is small, like 40-50 head. We were anticipating our own milk from a cow my in laws had gifted me. But sadly, she freshened 2 weeks ago & died the next day, leaving us with a calf to bottle feed. So sad. and now we can't get milk from our farmer either.

      My understanding of listeria was that all milk has it but it's the amount that matters. 🤔 If he had a clean set up I highly doubt it was high enough to be problematic.

    I just wish for the return of the daily milkman visit. Maybe we can bring this back some day. Would make things so much easier for families.

    A friend and Irecently met The Stelzer's in person at a homesteading event. I spoke with them about their jars and they said they were unable to find a manufacturer in the USA. We live in OK and there is access to sand in the AR River here. We told Mr Stelzer and his wife the name of a local glass manufacturing company and he seemed very interested in contacting them. I hope they have the ability to provide US made canning jars. Just think of the market for them!

    Will try this. Purchased milk from azure and just froze in the bottles the came in. My husband didn’t like the texture.
    What brand is the tall jars?
    I have some Weck jars which may work 🤷‍♀️

      Yes, for some reason freezing milk in big quantities doesn't seem to thaw well, also I do think taking a lot of the cream off helps with the texture. And they are Mason Brand Jars. I got them from our local hardware store when we lived in Indiana, they came in a four pack, sadly I've never seen them since!

    I will have to try this method. I have had no luck freezing/defrosing " raw" milk without strange texture/clumps..tastes ok...just looks awful!

      Yes, I think freezing in smaller amounts helps, and we let it fully thaw before drinking it. Also, I think it helps taking as much of the cream layer off as possible!

    I heard you mention a flea market/auction in Indiana. Is it the one in Shipshewana? I grew up in that area and just returned from visiting. Raw milk is so much cheaper there.

      It was actually in Brookville in Indiana, but we had SO many people tell us we needed to go to Shipshewana, and we never ended up making it up there! So cool you grew up in that area, Indiana will forever have a special place in my heart! And you are right about the raw milk prices!!

    How do you make butter in vitamix. Ive never made butter since i dont have a stand mixer.

      I love making butter and nut butter in my Vitamix. If anyone is on the fence about purchasing a Vitamix I highly recommend it! I use mine almost every day.
